Ingredients
  • Naengmyeon noodles for 2 servings
  • 310ml chilled beef broth
  • 1 hard-boiled egg
  • A little cucumber
  • Pickled radish for naengmyeon (refer to recipe @6940092)
  • 2 Tbsp vinegar (1 Tbsp for Mul Naengmyeon, 1 Tbsp for Bibim Naengmyeon)
  • 2 Tbsp sesame oil (1 Tbsp for Mul Naengmyeon, 1 Tbsp for Bibim Naengmyeon)
  • 2 Tbsp sesame seeds (1 Tbsp for Mul Naengmyeon, 1 Tbsp for Bibim Naengmyeon)
  • A little mustard (for Bibim Naengmyeon)

Cooking Instructions

Step 1

Please refer to the recipe @6940092 – [How to Make Pickled Radish for Naengmyeon] – to prepare the crunchy and tangy pickled radish beforehand. This will add a richer flavor.

Step 2

Prepare the naengmyeon noodles. Ensure they are kept cold.

Step 3

The naengmyeon package usually includes the noodles and a bibim (spicy sauce) packet. Have your bibim sauce ready.

Step 4

Prepare the chilled beef broth for Mul Naengmyeon. If the broth is frozen, it will make the dish even more refreshing.

Step 5

If using frozen broth, gently chip away at the ice with a knife to create a slushy, icy broth. This ‘half-frozen’ broth is key to a perfect Mul Naengmyeon.

Step 6

Boil the egg until hard-boiled. Once cooled slightly, peel and cut it in half. Thinly julienne the cucumber.

Step 7

Loosen the frozen naengmyeon noodles by gently separating them with your hands so they don’t clump together.

Step 8

Bring a large pot of water to a rolling boil. Add the loosened noodles and cook for about 50 seconds to 1 minute. Be careful not to overcook, as they can become mushy.

Step 9

Immediately drain the cooked noodles in a colander and rinse them thoroughly under cold running water. This step is crucial for achieving a firm, chewy texture.

Step 10

Drain the noodles well. Removing excess water is important so it doesn’t dilute the flavor of the bibim sauce. Give the colander a gentle shake to remove as much water as possible.

To make Mul Naengmyeon: Place the drained noodles in a bowl. Top with pickled radish, julienned cucumber, and half a hard-boiled egg. Pour over the chilled beef broth, and add 1 Tbsp vinegar, 1 Tbsp sesame oil, and 1 Tbsp sesame seeds. Mix and enjoy this refreshing cold noodle soup.

Step 12

Now, let’s make the spicy and addictive Bibim Naengmyeon! Place the drained noodles in a bowl. Add the bibim sauce (or your homemade spicy sauce), pickled radish, and julienned cucumber. Drizzle with 1 Tbsp vinegar, 1 Tbsp sesame oil, 1 Tbsp sesame seeds, and a touch of mustard. You can also add the hard-boiled egg and a little beef broth to your liking. Mix everything together thoroughly with chopsticks until well combined. Your delicious Bibim Naengmyeon is ready!
