Begin by preparing one pack of frozen chicken feet, which you can easily purchase online. While it might seem like a large portion for one person, it’s perfect for true chicken feet enthusiasts!

The secret to delicious braised chicken feet lies in the sauce. In a bowl, combine 2 tablespoons of gochujang, 5 tablespoons of gochugaru, 1 tablespoon of minced garlic, 1 tablespoon of corn syrup, 1 tablespoon of sugar, 2 tablespoons of mirin, and 4 tablespoons of soy sauce. Add a pinch of black pepper, and optionally, a bit of Dasida and Myeonddo for extra umami. Mix everything thoroughly until you have a smooth, flavorful paste.

Rinse the chicken feet thoroughly under cold water. Place them in a pot or a pressure cooker. Pour in enough water to completely submerge the chicken feet. For added aroma and flavor, toss in 2-3 bay leaves and a few whole peppercorns. If using a pressure cooker, do not close the lid while boiling. A regular pot works just fine too.

It’s important not to overcook the chicken feet. Aim for a slightly firm yet tender texture that retains its satisfying chewiness. They should be plump but not mushy.
