Spicy and Sweet Braised Eggs
Deliciously Spicy and Sweet Braised Eggs! Perfect for mixing with rice, especially with the savory broth!
Instead of the traditional soy sauce base, I’ve created a special, flavorful braised egg dish using gochujang (Korean chili paste) and gochugaru (Korean chili flakes). It’s a true rice-lover’s delight!
Main Ingredients- 14-15 eggs
- 1 Tbsp vinegar (for boiling eggs)
Spicy & Sweet Sauce- 4-5 Tbsp soy sauce (jin-ganjang)
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 tsp minced garlic
- 2 Tbsp oligosaccharide (or corn syrup)
- 2-3 Tbsp sugar
- 1 tsp sesame oil
- 4-5 Tbsp soy sauce (jin-ganjang)
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 tsp minced garlic
- 2 Tbsp oligosaccharide (or corn syrup)
- 2-3 Tbsp sugar
- 1 tsp sesame oil
Cooking Instructions
Step 1
Fill a pot with enough water to completely cover the eggs. Add 1 tablespoon of vinegar to the water – this helps make the eggshells easier to peel. Gently stir the eggs with chopsticks while they boil for 8-10 minutes until hard-boiled.
Step 2
After boiling, rinse the eggs under cold water to cool them down. Carefully peel the shells off and set the peeled eggs aside. If the shells are difficult to remove, try soaking them in cold water or gently tapping the shell to crack it before peeling.
Step 3
In a bowl, combine the soy sauce, gochujang, gochugaru, minced garlic, oligosaccharide, sugar, and sesame oil. Mix well until smooth to create the delicious sauce. Adjust the amount of sugar or soy sauce to suit your personal preference for sweetness and saltiness.
Step 4
Place the peeled boiled eggs in a pot. Pour in enough water so that the eggs are about halfway submerged. Add all of the prepared sauce to the pot. Stir to help the sauce dissolve into the water.
Step 5
Bring the pot to a boil over high heat and let it simmer for 8-10 minutes, allowing the eggs to absorb the flavors. Continue to cook until the sauce thickens and the eggs are well-coated. The sauce should reduce to about half its original volume, coating the eggs.
Step 6
This braised egg dish, with its slightly soupy, spicy, and sweet sauce, is delicious on its own. However, mixing one of the braised eggs with a bit of the sauce and stirring it into your rice creates an incredibly tasty meal! It’s similar to the delightful experience of eating a braised egg in soupy tteokbokki. This dish makes for a satisfying side that the whole family will love.
