Whip up this delicious dish with common pantry ingredients! This is my take on the spicy and sweet braised eggs from the popular Korean show ‘Sumi’s Side Dishes’. Unlike the typical soy sauce-based braised eggs, this recipe uses gochujang (Korean chili paste) for a rich, complex flavor that’s incredibly addictive with rice. The addition of finely chopped cheongyang chili peppers adds a pleasant kick. It’s a straightforward recipe that anyone can easily follow.

First, prepare 7 fresh eggs. Fill a pot with plenty of water, adding a pinch of salt and a splash of vinegar. Once the water comes to a boil, carefully add the eggs and let them cook for about 15 minutes until hard-boiled. Cooking for 15 minutes ensures the yolks are completely set, making them perfect for braising.

Prepare 3 Cheongyang chili peppers for a spicy kick. The original recipe sometimes uses kkwari gochu (a type of green chili pepper) as well, but these Cheongyang chilies alone will provide a nice heat. Feel free to adjust the number of chilies based on your preference for spiciness.

Immediately after boiling, transfer the cooked eggs to a bowl of cold water to cool them down quickly. This makes peeling much easier. Once cooled, peel the eggs carefully. You can braise the eggs whole, or for better flavor absorption, cut 2-3 eggs in half. If using a knife, aim for a clean cut when halving them.

Now, let’s make the delicious braising liquid. In a frying pan, combine 150ml of water, 1-2 tablespoons of soy sauce, 1 generous tablespoon of gochujang, and 1 tablespoon of corn syrup. Adjust the soy sauce amount to your liking – 2 tablespoons for a saltier taste, or 1 tablespoon for a milder flavor. Stir everything together over low heat until the gochujang is fully dissolved and the mixture begins to simmer.

As the seasoning mixture starts to bubble, add the chopped Cheongyang chili peppers. Let them simmer together, allowing their spicy aroma and flavor to infuse into the sauce.

Once the sauce is simmering, add all the prepared eggs to the pan. Using a spoon, ladle the sauce over the eggs repeatedly. Continue this process to ensure the eggs are evenly coated and absorb the rich flavors.

When the eggs have been braised and the sauce has thickened significantly, stir in 1 tablespoon of corn syrup and 1 tablespoon of sesame oil. Sprinkle with sesame seeds. Increase the heat slightly and continue to cook for a short while until the sauce is glossy. Your spicy and sweet braised eggs are now ready to be enjoyed!
