Main Ingredients- 7 eggs
- 100g Korean green chili peppers (kwari gochu)
- 1 red chili pepper
- 1 Cheongyang chili pepper (or other small, hot green chili)
Cooking Instructions
Step 1
Take the eggs out of the refrigerator about 30 minutes before you plan to cook them. Letting them come to room temperature helps prevent cracking when boiled.
Step 2
Prepare a pot with water and a pinch of salt. Once the water comes to a rolling boil, gently place the eggs in. Cover the pot and boil for about 6 minutes for soft-boiled eggs, or longer for hard-boiled. Adjust the time based on your preferred doneness.
Step 3
Once cooked, immediately transfer the boiled eggs to a bowl of cold water to cool them down. This step makes peeling the shells much easier.
Step 4
When the eggs are thoroughly chilled, begin peeling them. A tip for easy peeling: gently roll the eggs in the cold water while peeling. This can help loosen the shell without damaging the egg white.

Finely chop the Cheongyang chili and red chili peppers. Wash the Korean green chili peppers, trim off the stems, and set aside. Now you’re ready to prepare the braising liquid.

In a pot over medium heat, combine the water, brewed soy sauce, and gochujang. Stir well to mix. Once the mixture begins to simmer, add the chopped chili peppers, the prepared Korean green chili peppers, and the peeled boiled eggs. Bring to a gentle boil, then reduce the heat to medium-low and let it simmer.

Allow the mixture to simmer until the liquid has reduced and become slightly thick, and the eggs have absorbed the flavors.
