Main Ingredients- 450-500g potatoes, peeled
- 1 Tbsp chopped scallions
- 1/2 Tbsp minced garlic
- 1.5 Tbsp gochugaru (Korean chili flakes)

Braising Sauce- 5-6 Tbsp soy sauce
- 1 cup water (200ml)
- 1 Tbsp sugar
- 2 Tbsp corn syrup or rice syrup

Cooking Instructions
Step 1
First, thoroughly peel the potatoes and rinse them under running water. It’s important to remove any dirt or debris from the potatoes.

Cut the prepared potatoes into bite-sized pieces. Immediately after cutting, soak them in cold water with a pinch of salt. This crucial step helps prevent the potatoes from breaking apart during cooking and keeps them firm. Let them soak for about 10 minutes.

Gather all the ingredients for the braising sauce: soy sauce, water, sugar, and corn syrup. Mixing them together beforehand will make the cooking process smoother.

Drain the potatoes from the saltwater and rinse them lightly under running water. Ensure you pat them dry thoroughly with paper towels or a clean kitchen towel. Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the dried potatoes and stir-fry them for a few minutes until they start to soften slightly. Then, add the gochugaru and stir-fry for another 1-2 minutes, coating the potatoes evenly. This step gives the potatoes a beautiful reddish hue.
