Combine all the marinade ingredients – gochujang, gochugaru, soy sauce, curry powder, sugar, chopped green onion, and minced garlic – in a bowl. Mix well until smooth to create the marinade. Adding curry powder helps to eliminate the gamey smell of chicken feet and adds a richer flavor.

Now, let’s prepare for boiling the chicken feet. In a pot, add about 1 liter of water, 3 Tbsp soy sauce, 2 Tbsp sugar, and the optional 1/2 handful of astragalus root. Once the water is boiling vigorously, add the 1kg of chicken feet. Cover the pot and boil over medium heat for about 20 minutes. Boiling them just until tender, not mushy, is key to preserving a pleasant chewy texture.

After boiling, discard the water and transfer the cooked chicken feet to a wide pan or wok. Draining them well ensures the sauce will adhere properly when stir-frying.
