Spicy and Sweet Cucumber Salad (Oi Muchim)
Super Simple Cucumber Salad for Solo Dwellers
I love cucumbers, and my sibling likes things that are sweet and sour. Since I had cucumbers at home, I decided to make a simple, sweet, and sour dish perfect for those living alone! This refreshing salad is quick to prepare and bursting with flavor.
Main Ingredients- 2 cucumbers
- 1/2 onion
Seasoning- 1.5 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Vinegar
- 2 Tbsp Sugar
- 1 Tbsp Minced Garlic
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1.5 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Vinegar
- 2 Tbsp Sugar
- 1 Tbsp Minced Garlic
- 1 Tbsp Gochugaru (Korean chili flakes)
Cooking Instructions
Step 1
Gather your ingredients: 2 cucumbers and half an onion. For the seasoning, prepare 1.5 tablespoons of gochujang, 1 tablespoon of gochugaru, 2 tablespoons of sugar, 2 tablespoons of vinegar, and 1 tablespoon of minced garlic.
Step 2
Thinly slice the onion into shreds. Wash the cucumbers thoroughly and slice them according to your preference – half-moons or diagonally are common. Slicing them thinly will help them absorb the dressing better.
Step 3
Place the sliced cucumbers and onions into a mixing bowl. Add all the prepared seasoning ingredients: gochujang, gochugaru, sugar, vinegar, and minced garlic. Gently mix everything together with your hands until the vegetables are evenly coated. Be careful not to over-mix, as this can release too much water from the cucumbers.
Step 4
Transfer the deliciously seasoned cucumber salad to a serving plate. Enjoy this simple yet incredibly flavorful dish as a refreshing side to your meal!
