Main Ingredients

  • 1 pack Dakbokkeumtang-cut chicken (approx. 1kg)
  • 3 potatoes
  • 1/2 carrot
  • 1 onion
  • 2 shiitake mushrooms
  • 1 green onion
  • 2 Tbsp soju (for removing gamey smell)

Seasoning

  • 3 cups water
  • 3 Tbsp sugar
  • 1/2 cup soy sauce (for seasoned dishes)
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp minced garlic

Cooking Instructions

Step 1

First, prepare the chicken. Rinse the chicken pieces meant for Dakbokkeumtang lightly under running water.

Step 1

Step 2

Trim any excess fat from the chicken. Bring water to a boil in a pot and add 2 tablespoons of soju to the boiling water. Add the chicken pieces and blanch for about 3 to 5 minutes. This step is crucial for removing any unpleasant odors from the chicken.

Step 2

Step 3

After blanching, rinse the chicken under cold water to wash it clean. Gently pat it dry with paper towels and then place it in a colander to drain off any excess water.

Step 3

Step 4

Next, prepare the vegetables. Cut the potatoes, onion, and shiitake mushrooms into bite-sized pieces, suitable for a stew. Chop the carrot into similar-sized pieces.

Step 4

Step 5

Slice the green onion diagonally into large pieces. Cutting them too thinly will result in them becoming mushy when cooked, so aim for substantial chunks.

Step 5

Step 6

Now, let’s start cooking the Dakbokkeumtang. Place the prepared chicken in a pot. Add 3 cups of water (600ml) and 3 tablespoons of sugar. Bring this mixture to a boil over high heat.

Step 7

Once the liquid begins to boil,

Step 8

Add the prepared potatoes, carrot, and onion. Stir in 2 tablespoons of minced garlic, 1/2 cup (100ml) of soy sauce, and 3 tablespoons of gochugaru. Mix everything well to ensure the seasoning is evenly distributed.

Step 8

Step 9

Finally, add the shiitake mushrooms. Cover the pot and let it simmer over medium-low heat, allowing the flavors to meld and the ingredients to cook down. Simmer until the sauce thickens slightly and the flavors are rich.

Step 9

Step 10

Check if the potatoes and chicken are tender. You can test this by piercing them with a fork; they should yield easily when cooked through.

Step 10

Step 11

Once the chicken and vegetables are fully cooked, add the large, diagonally sliced green onion pieces. Stir gently to incorporate them into the stew. Let it simmer for another minute or two for the onion’s aroma to infuse the sauce.

Your delicious Dakbokkeumtang is ready! Enjoy it piping hot with a bowl of steamed rice.
