Spicy and Sweet Dakbokkeumtang (Korean Braised Chicken)
Summer Revitalizer & Perfect Soju Appetizer: The Golden Recipe for Dakbokkeumtang (feat. Kovea Roasting Pan)
My friend came over for a daytime drink, so I decided to make this spicy and savory Dakbokkeumtang as a perfect accompaniment! It’s a delightful dish that’s great for casual gatherings.
Main Ingredients- 1 whole chicken, cut into pieces
- 1 stalk of green onion (scallion)
- 2 potatoes
- 1 onion
Cooking Instructions
Step 1
First, rinse the chicken pieces thoroughly under running water to remove any impurities. You can trim off excess skin or fatty parts if you prefer.
Step 2
Peel the potatoes and cut them into large, bite-sized cubes. Peel and roughly chop the onion as well. Cutting them into larger pieces will prevent them from falling apart during cooking.
Step 3
Now, let’s make the delicious seasoning! In a bowl, combine 2 Tbsp of gochujang, 2 Tbsp of soy sauce, 2 Tbsp of gochugaru, 2 Tbsp of sugar, and 2 Tbsp of maesilcheong. Mix them well. Finally, add 2 Tbsp of minced garlic for a rich flavor. Your tasty seasoning is ready!
Step 4
To remove any gamey smell from the chicken and ensure a cleaner taste, blanch the chicken pieces in boiling water for about 2-3 minutes. After blanching, rinse the chicken under cold water and drain well. This step helps to make the broth clearer and less greasy.
Step 5
In a wide pot, add the blanched chicken, the cubed potatoes, and the chopped onion. Pour all the prepared seasoning over the ingredients. Gently mix everything to coat the chicken and vegetables evenly. Add just enough water to cover the ingredients partially, and bring to a simmer over medium heat.
Step 6
Once the sauce has reduced to your desired consistency and the potatoes are tender, slice the green onion diagonally and add it to the pot. Let it simmer for another minute or two. Adding the green onions not only enhances the visual appeal but also adds a fresh aroma, making the dish even more delicious. Your Dakbokkeumtang is now complete and ready to be enjoyed!
