Ingredients

  • 1.2 kg chicken, cleaned
  • 4 Tbsp soy sauce
  • 2 Tbsp gochugaru (Korean chili powder)
  • 2 Tbsp gochujang (Korean chili paste)
  • 4 Tbsp minced garlic
  • 1 Tbsp minced ginger
  • 3 Tbsp mirin (rice wine)
  • 2 Tbsp oligodang (corn syrup or other liquid sweetener)
  • 1 tsp black pepper powder

Cooking Instructions

Step 1

First, wash the chicken thoroughly under running water. Blanch the chicken in boiling water for about 5 minutes. This step is crucial for removing any gamey odors and excess fat, resulting in a cleaner and more delicate flavor profile.

Step 1

Step 2

After blanching, immediately transfer the chicken to cold running water and rinse it well. This ensures that any remaining blood or impurities are washed away, making your dakbokkeumtang more hygienic.

Step 2

Step 3

In a bowl, combine the soy sauce, gochugaru (Korean chili powder), gochujang (Korean chili paste), minced garlic, minced ginger, mirin (rice wine), oligodang (corn syrup), and black pepper powder. Mix them thoroughly until you have a smooth, flavorful sauce. This sauce is the heart of the dish, so take your time to make it perfectly!

Step 3

Step 4

Add the cleaned chicken to the bowl with the prepared sauce. Use your hands to gently massage the sauce into the chicken, ensuring every piece is evenly coated. This helps the flavors penetrate deeply.

Step 4

Step 5

Transfer the sauced chicken to a deep pot or wok. Add enough water to almost cover the chicken. Bring to a boil over high heat, then reduce to medium heat and let it simmer until the chicken is tender and cooked through.

Step 5

Step 6

Once the chicken is partially cooked, add the carrots and potatoes that have been cut into large pieces. For a neater presentation, you can peel the carrots and potatoes using a ‘tourne’ cut, which helps them hold their shape as they cook. Continue simmering until the potatoes are fork-tender.

Step 6

Step 7

When the potatoes are almost cooked, add the onion, also cut into large pieces. The onions will add a natural sweetness that enhances the overall flavor of the dakbokkeumtang.

Step 7

Step 8

Continue to simmer until the sauce has thickened and reduced to your desired consistency, and all the vegetables are tender. Finally, add the large chunks of green onion and simmer for another minute or two. The fresh aroma of the green onions will complete the dish!

Step 8

Step 9

This homemade dakbokkeumtang is sure to be a hit with your family, creating a wonderful mealtime experience. Enjoy the hearty chicken and the irresistibly sweet and savory sauce that’s perfect for pairing with rice!
