- 1 whole chicken
- 1/2 large carrot
- 2 medium potatoes
- 1 medium onion
- 1/2 stalk green onion
Seasoning Sauce
- 6 Tbsp soy sauce
- 3 Tbsp red pepper flakes (gochugaru)
- 3 Tbsp red pepper paste (gochujang)
- 2 Tbsp sugar
- 2 Tbsp corn syrup (oligosaccharide)
- 2 Tbsp minced garlic
- Pinch of black pepper
- 6 Tbsp soy sauce
- 3 Tbsp red pepper flakes (gochugaru)
- 3 Tbsp red pepper paste (gochujang)
- 2 Tbsp sugar
- 2 Tbsp corn syrup (oligosaccharide)
- 2 Tbsp minced garlic
- Pinch of black pepper
Cooking Instructions
Step 1
First, prepare the chicken. Place the chicken in a pot, cover with water, and boil for about 5-10 minutes until any blood or impurities have risen to the surface. To help remove any gamey odor, you can add a splash of cooking wine (like mirin), soju, or a few whole peppercorns while boiling.
Step 2
While the chicken is parboiling, prepare the vegetables. Cut the carrot, potatoes, and onion into bite-sized pieces, roughly similar in size. Slice the green onion diagonally. Once the chicken has no visible blood, discard the boiling water. Rinse the chicken thoroughly under cold running water. If you prefer less fat, you can remove the chicken skin at this stage.
Step 3
Return the cleaned chicken to the pot and add enough fresh cold water to cover it. Add the carrots next, as they take a bit longer to cook than other vegetables. While the carrots begin to simmer, let’s prepare the flavorful seasoning sauce that is the heart of Dakbokkeumtang.
Step 4
Once the chicken and carrots start to boil, add the potatoes and the prepared seasoning sauce to the pot. Stir everything well to combine. Let it simmer for about 10 minutes, then add the onion and continue cooking. Allow the Dakbokkeumtang to simmer over medium-high heat for approximately 30 minutes, or until the sauce has thickened and reduced to your desired consistency. Stir occasionally to ensure the flavors meld evenly.
Step 5
This is the final step! Once the sauce has reduced nicely, add the sliced green onion and cook for another minute or two. Serve the Dakbokkeumtang generously in a bowl.
