Spicy and Sweet Dakbokkeumtang (Korean Braised Chicken)
How to Make Delicious Dakbokkeumtang: A Savory and Spicy Delight
Transform that half chicken from your freezer into a hearty and flavorful Dakbokkeumtang! This recipe is simple yet packed with deep flavors, perfect for creating a wonderful meal the whole family will enjoy.
Main Ingredients- 1/2 chicken (approx. 500g)
- 1/2 onion (cut into large chunks)
- 1/2 stalk green onion (cut into large pieces)
- 1 potato (cut into large chunks)
- 100g tteokbokki tteok or garaetteok (optional)
Sauce Ingredients- 1 Tbsp minced garlic
- 1/2 tsp grated ginger
- 5 Tbsp soy sauce (1 Tbsp soup soy sauce, 4 Tbsp regular soy sauce)
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp mirin (rice wine)
- 1 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp sugar
- A pinch of sesame seeds (for garnish)
- 1 Tbsp minced garlic
- 1/2 tsp grated ginger
- 5 Tbsp soy sauce (1 Tbsp soup soy sauce, 4 Tbsp regular soy sauce)
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp mirin (rice wine)
- 1 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp sugar
- A pinch of sesame seeds (for garnish)
Cooking Instructions
Step 1
Thaw the chicken and rinse it thoroughly under running water. To remove any gamey smell, bring a pot of water to a boil with a bit of ginger and 1 Tbsp of mirin. Add the chicken and blanch for 1-2 minutes. Drain and rinse under cold water to remove impurities.
Step 2
Place the blanched chicken in a pot. Add all the sauce ingredients (minced garlic, ginger, soy sauce, gochujang, gochugaru, mirin, oligosaccharide, sugar) and 300ml of water. Mix well. Bring to a boil over high heat, then reduce to medium-low heat and simmer for 10 minutes to allow the chicken to absorb the flavors.
Step 3
Once the sauce starts to thicken slightly, add the large chunks of potato and tteokbokki tteok (or garaetteok). Cover the pot and continue to cook over medium heat for about 15-20 minutes, or until the potatoes and tteok are tender. You can add a little more water if the sauce becomes too reduced.
Step 4
When the potatoes and tteok are almost cooked, add the large pieces of green onion and simmer for another minute until the green onion wilts slightly. Turn off the heat and garnish with a sprinkle of sesame seeds. Your delicious Dakbokkeumtang is ready to be enjoyed with a side of rice!
