Main Ingredients
  • 500g boneless chicken thighs, cut into bite-sized pieces
  • 1 handful of cabbage, roughly chopped
  • 1/2 onion, thinly sliced
  • 1 handful of mushrooms (any variety), sliced
  • 10 perilla leaves, washed and quartered

Seasoning
  • 1 cup store-bought gochujang-based sauce (any brand works)
  • 2 Tbsp chili powder (gochugaru)
  • 2 Tbsp minced garlic
  • 2 Tbsp soy sauce

Cooking Instructions

Step 1

Prepare the chicken thigh meat by rinsing it lightly under cold water. Cut the chicken into bite-sized pieces, about 3-4 cm. If there are any bones, remove them for a more tender result.

Step 2

In a large bowl, combine the cut chicken thighs with 1 cup of your chosen store-bought Dakgalbi sauce (any brand is fine), 2 tablespoons of chili powder, 2 tablespoons of minced garlic, and 2 tablespoons of soy sauce. Mix everything thoroughly to coat the chicken. Let it marinate for at least 10 minutes to allow the flavors to meld beautifully.

Step 3

Roughly chop the cabbage and thinly slice the onion. Prepare your mushrooms by trimming the ends and slicing them into manageable pieces. Wash the perilla leaves and remove the stems, then cut them into quarters. The perilla leaves add a fresh aroma, so it’s best to add them towards the end of cooking.

Step 4

Heat a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until it starts to cook. Once the chicken is partially cooked, add the cabbage, onion, and mushrooms. Continue to stir-fry, ensuring everything is well combined and the vegetables soften. Cook until the chicken is thoroughly done, adjusting the heat as needed to prevent sticking or burning.

Step 5

When the chicken is fully cooked and the vegetables are tender, add the quartered perilla leaves. Stir-fry for just another minute or so, allowing their fresh fragrance to infuse into the dish without overcooking them. Voilà! Your delicious Dakgalbi is ready!

Step 6

Serve hot, perhaps with some rice! For an even more satisfying meal, consider adding optional ingredients like rice cakes (tteok), sweet potato slices, or melted cheese.
