Spicy and Sweet Delicious Pepper Kimchi Recipe
Crispy Pepper Kimchi Made with Cheongyang Peppers

Main Ingredients- 10 green chili peppers (mild variety)
- 1/4 carrot (julienned thinly)
- 700ml water
- 1 tsp coarse salt
Kimchi Seasoning- 2 Tbsp chili powder (gochugaru)
- 1 Tbsp anchovy sauce (myeolchi aekjeot)
- 1 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp plum extract (maesil aekjeot)
- A pinch of toasted sesame seeds (for nutty flavor)
- 2 Tbsp chili powder (gochugaru)
- 1 Tbsp anchovy sauce (myeolchi aekjeot)
- 1 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp plum extract (maesil aekjeot)
- A pinch of toasted sesame seeds (for nutty flavor)
Cooking Instructions
Step 1
Wash the green chili peppers thoroughly after removing the stems. In a pot, bring 700ml of water to a boil with 1 tsp of coarse salt. Blanch the chili peppers in the boiling water for about 30 seconds to 1 minute; do not overcook, or they will become mushy. Rinse the blanched peppers under cold water to cool them down, then carefully slice them in half lengthwise and remove the seeds. Drain them well and let them sit to remove excess moisture.
Step 2
Add the thinly julienned carrot to the prepared chili peppers and mix evenly. The carrot adds color and a satisfying crunch.
Step 3
Now, let’s make the kimchi seasoning. In a bowl, combine 2 Tbsp of chili powder, 1 Tbsp of minced garlic, and 1 Tbsp of sugar. Mix well. You can let this mixture sit for a moment to allow the chili powder to hydrate.
Step 4
To the seasoned mixture, add 1 Tbsp of anchovy sauce and 1 Tbsp of plum extract. Stir everything together until well combined. The anchovy sauce provides umami, while the plum extract adds a subtle sweetness.
Step 5
Carefully stuff the prepared seasoning mixture into the split chili peppers. (Unfortunately, the photo for this step is missing!) Arrange the filled pepper kimchi nicely on a plate. Finish by sprinkling some toasted sesame seeds on top for a nutty aroma. Your delicious pepper kimchi is now ready! Store it in the refrigerator and enjoy it chilled.
