This deodeok salad gets a flavor boost from gochujang and a touch of gochugaru, making it incredibly appetizing. The addition of a special spicy-sweet sauce elevates its taste to another level.

- 200g prepared deodeok (Korean bellflower root)
Seasoning Ingredients
- 2 Tbsp gochujang (Korean chili paste)
- 1.5 Tbsp gochujang-based sweet and spicy sauce (cho-gochujang)
- 1 Tbsp gochugaru (Korean chili flakes)
- 0.5 Tbsp sugar (approx. 1/2 tsp)
- 1 Tbsp corn syrup or rice syrup
- 1 Tbsp minced garlic
- 2 pinches salt (approx. 1g)
- 1 Tbsp perilla oil
- 1 Tbsp toasted sesame seeds
- 10g chopped green onion (approx. 1 Tbsp)

Cooking Instructions

First, thoroughly prepare the deodeok by removing its skin. You can soak it in water and gently peel off the outer layer. Use a knife to scrape off any remaining stubborn bits of skin. This recipe uses 200g of prepared deodeok.

To ensure a pleasant, crisp texture, slice the prepared deodeok into thin rounds, about 0.3 to 0.5 cm thick. Avoid slicing too thinly, as this can diminish its satisfying crunch.

Now, let’s prepare the flavorful sauce. In a bowl, combine gochujang, cho-gochujang, gochugaru, minced garlic, sugar, corn syrup, and salt. Mix them well. Please measure carefully, using level spoonfuls for best results.

Be mindful not to add too much sugar. Just 0.5 Tbsp (about 1/2 teaspoon) is enough to add a subtle sweetness without overpowering the other flavors.
