Main Ingredients

  • 3 sheets Dried Tofu (approx. 200g)
  • 10 Perilla leaves
  • 70g Cabbage
  • 2 Cheongyang peppers (Korean red chili peppers)
  • 60g Carrot
  • 40g Lettuce

Seasoning Ingredients

  • 2 Tbsp Gochugaru (Korean chili powder)
  • 3 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Jin-ganjang (Korean soy sauce)
  • 1 Tbsp Jocheong (grain syrup) or Corn syrup
  • 2 Tbsp Sugar
  • 4 Tbsp Vinegar
  • 1 Tbsp Mirim (rice wine for cooking)
  • 1/2 Tbsp Minced garlic
  • 1 Tbsp Toasted sesame seeds
  • 1 Tbsp Sesame oil

Cooking Instructions

Step 1

Roll up 3 sheets of dried tofu (approx. 200g) and slice them into 1cm thick pieces. You can adjust the thickness to your preference. Thinner slices will absorb the seasoning better and taste more delicious.

If the sliced dried tofu pieces are stuck together, gently separate them with your hands. Rinse them under cold water 2-3 times until clean, then drain thoroughly in a sieve. If there’s too much water, the salad might taste bland.

In a bowl, combine 2 Tbsp Gochugaru, 3 Tbsp Gochujang, 1 Tbsp Jin-ganjang, 1 Tbsp Jocheong or Corn syrup, 2 Tbsp Sugar, 1/2 Tbsp minced garlic, 1 Tbsp Mirim, and 4 Tbsp vinegar. Mix well until there are no lumps to create a delicious seasoning paste. This is the golden ratio for a sweet and tangy flavor!

Now, let’s prepare the vegetables. Finely julienne 60g of carrot, 10 perilla leaves (approx. 20g), 70g of cabbage, and 40g of lettuce. Remove the seeds from 2 Cheongyang peppers and slice them thinly on an angle to add a spicy kick.

In a large bowl, add the drained dried tofu, julienned carrots, perilla leaves, cabbage, lettuce, and diagonally sliced Cheongyang peppers. Pour all the prepared seasoning paste over them. Finally, add 1 Tbsp sesame oil and 1 Tbsp toasted sesame seeds for extra aroma.

Gently mix everything with your hands until the seasoning is evenly distributed and coats the dried tofu and vegetables. Be careful not to mix too vigorously, as the dried tofu can break apart. Your delicious dried tofu salad is now ready!
