Main Ingredients

  • Pork 100g (ground or thinly sliced for bulgogi)
  • Garlic 3 cloves
  • Cabbage 30g (approx. 1/8 head)
  • Green onion 1 stalk
  • Cooking oil 2 Tbsp
  • Warm cooked rice 200g (1 bowl)

Dubanjiang Sauce

  • Dubanjiang (chili bean paste) 1 Tbsp
  • Minced garlic 1 tsp
  • Soy sauce 1/2 Tbsp
  • Sugar 1/2 Tbsp
  • Red pepper flakes 1/2 Tbsp
  • Sake (or cooking wine) 1 Tbsp
  • Black pepper a pinch

Cooking Instructions

Step 1

First, cut the pork into bite-sized pieces, about 2-3 cm, for easy topping on the rice bowl. Using thinly sliced bulgogi-style pork will make this step even easier.

Step 1

Step 2

Peel the garlic cloves and slice them thinly. Using sliced garlic will enhance the flavor as it cooks.

Step 2

Step 3

Wash the cabbage thoroughly, then cut it into square pieces, about 2-3 cm. You can also shred it, but diced cabbage offers a more satisfying texture.

Step 3

Step 4

Slice the green onion diagonally into segments of about 2-3 cm, including both the white and green parts. The fragrant green onion will add depth to the rice bowl’s flavor.

Step 4

Step 5

In a small bowl, combine 1 Tbsp of Dubanjiang, 1 tsp of minced garlic, 1/2 Tbsp of soy sauce, 1/2 Tbsp of sugar, 1/2 Tbsp of red pepper flakes, 1 Tbsp of sake (or cooking wine), and a pinch of black pepper. Mix well to create the delicious sauce. You can adjust the sugar to your preference for sweetness.

Step 5

Step 6

Heat a wok or deep skillet over medium heat. Add 2 Tbsp of cooking oil and the sliced garlic. Stir-fry until the garlic releases its aroma, being careful not to burn it. This fragrant garlic oil is the flavor base.

Step 6

Step 7

Once the garlic is fragrant, add the prepared pork. Increase the heat to high and stir-fry quickly. Use chopsticks or a spatula to break up the pork as it cooks, ensuring it browns evenly.

Step 7

Step 8

When the pork is mostly cooked through (its color changes to opaque), add the diced cabbage and green onions. Continue stir-frying over high heat for about 2-3 minutes until the vegetables are slightly tender but still retain some crispness. Stir-fry briskly to prevent burning.

Step 8

Step 9

Once the cabbage has softened slightly, pour in the prepared Dubanjiang sauce. Stir-fry over high heat for another 1-2 minutes, ensuring the sauce coats all the ingredients evenly. Cook quickly to prevent the sauce from burning.

Step 9

Step 10

Serve the warm cooked rice in a bowl, and generously top it with the flavorful Dubanjiang pork stir-fry. Your delicious Dubanjiang Pork Rice Bowl is ready! For an extra touch, consider adding a fried egg or some shredded seaweed.
