Crispy anchovies coated in a spicy and sweet sauce! This Gochujang Anchovy Stir-fry is a highly addictive side dish that will have you reaching for more rice. The kick from the chili peppers and the savory aroma of garlic add a deeper dimension to its flavor.
Main Ingredients- 110g Anchovies (small dried anchovies for stir-frying or larger ones for broth, depending on preference)
- 5 Cheongyang peppers (adjust to your spice level)
- 5 cloves Garlic
Seasoning- 1.5 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Gochugaru (Korean chili flakes – for color and extra spice)
- 1/2 Tbsp Soy Sauce (for umami)
- 3 Tbsp Oligodang (corn syrup or rice syrup – for gloss and sweetness)
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil (for aroma, add at the end)
- Pinch of Toasted Sesame Seeds (for nutty flavor)
- 1/2 cup Water (to prevent burning and ensure a moist stir-fry)
- 1.5 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Gochugaru (Korean chili flakes – for color and extra spice)
- 1/2 Tbsp Soy Sauce (for umami)
- 3 Tbsp Oligodang (corn syrup or rice syrup – for gloss and sweetness)
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil (for aroma, add at the end)

Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor to the anchovy stir-fry. Remove the stems from the Cheongyang peppers and slice them thinly. Peel the garlic cloves and slice them thinly (julienne or thinly sliced). This will help them absorb the sauce and provide a pleasant texture when cooked.
Step 2
In a wide pan or skillet, combine all the seasoning ingredients except for the sesame oil: gochujang, gochugaru, soy sauce, oligodang, minced garlic, and water. Mix them well with chopsticks or a spatula to create the sauce. Mixing the sauce in advance makes the stir-frying process much easier.
Step 3
Heat the prepared sauce over medium-low heat. Once the sauce begins to bubble gently, add the sliced Cheongyang peppers and garlic. Stir them lightly with the sauce to release their flavors and aromas.
Step 4
Once the sauce and vegetables are somewhat combined, prepare to add the anchovies. Gently stir everything in the pan, scraping the bottom, to ensure the anchovies are coated evenly with the sauce. Be careful not to break the anchovies during this step.
Step 5
Now, add the main ingredient, the anchovies, to the pan. When stir-frying, avoid using excessively high heat, as this can cause the anchovies to burn. Adjust the heat as needed.
Step 6
Continue to stir-fry the anchovies over low heat, allowing them to be coated evenly with the sauce. When the anchovies start to become slightly crispy, just before turning off the heat, drizzle in the sesame oil and sprinkle with toasted sesame seeds.
