Spicy and Sweet Gochujang Anchovy Stir-fry Recipe for Adults
I always make anchovy stir-fry for my son, but today I was craving something spicy! So, I added plenty of Cheongyang chili peppers to make a Gochujang anchovy stir-fry that adults can enjoy. It’s a truly addictive dish that makes you want to eat more rice! ^^
Main Ingredients
- 1/2 cup anchovies (dried, small or stir-fry type)
- 7 cloves garlic, minced
- 3 Cheongyang chili peppers
Seasoning Ingredients
- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Oligodang (corn syrup) or honey
- 1/2 Tbsp Sesame Oil
- A pinch of toasted sesame seeds
- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Oligodang (corn syrup) or honey
- 1/2 Tbsp Sesame Oil
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, prepare 1/2 cup of anchovies. If using small anchovies for broth, remove the innards. For stir-fry anchovies, remove the head and innards for a cleaner taste.
Step 2
Place the anchovies in a dry, preheated pan over low heat and stir-fry for about 2-3 minutes. This process removes any fishy smell and makes the anchovies crispier.
Step 3
After stir-frying, place the anchovies in a sieve and gently shake off any powder or small bits. This helps the sauce adhere better to the anchovies later.
Step 4
Mince or thinly slice 7 cloves of garlic. Finely chop 3 Cheongyang chili peppers, removing the seeds if you prefer less heat. You can adjust the number of chili peppers to your spice preference.
Step 5
In a clean pan, add a little cooking oil and sauté the minced garlic over low heat. Cook slowly until the garlic turns golden brown and fragrant. This step enhances the overall flavor.
Step 6
Once the garlic is golden, add the chopped Cheongyang chili peppers and stir-fry briefly with the garlic. Allow the aroma of the chilies to infuse into the oil.
Step 7
At this point, you can add 1/2 Tbsp of chili oil for a richer color and deeper flavor. (You can skip this if you don’t have it).
Step 8
Add the seasoning ingredients: 1 Tbsp Gochujang, 1 Tbsp Gochugaru, and 1/2 Tbsp Soy Sauce. Stir well with the garlic and chilies over low heat, ensuring the seasonings don’t burn.
Step 9
Add the stir-fried anchovies to the pan and toss quickly to coat them evenly with the sauce. Once the anchovies are well-coated, turn off the heat immediately. Stir in 1 Tbsp of Oligodang (or honey) while the pan is still hot; this adds gloss and sweetness.
Step 10
Finally, drizzle in 1/2 Tbsp of sesame oil and sprinkle with toasted sesame seeds for an extra nutty aroma. Your delicious Gochujang anchovy stir-fry is ready!
