- 1/4 stalk of green onion
- 1 Korean chili pepper (cheongyang pepper)
- 1 cup water (200ml)
- Vegetable oil, as needed
Seasoning Ingredients- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Minced Garlic
- 2 Tbsp Cooking Wine (Mirin or Cheongju)
- 1 Tbsp Sugar
- 1 Tbsp Sesame Oil
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Minced Garlic
- 2 Tbsp Cooking Wine (Mirin or Cheongju)
- 1 Tbsp Sugar
- 1 Tbsp Sesame Oil
Cooking Instructions
Step 1
First, peel the potatoes and cut them in half, then slice them into half-moon shapes. Chop the onion into large, bite-sized pieces, and thinly slice the Korean chili pepper and green onion.
Step 2
Rinse the cut potatoes in cold water 2-3 times to remove excess starch. This helps the seasoning penetrate better and improves the texture. Drain the rinsed potatoes thoroughly in a colander.
Step 3
Now, let’s make the delicious seasoning for the braised potatoes. In a bowl, combine 2 Tbsp Gochujang, 2 Tbsp Soy Sauce, 1 Tbsp Gochugaru, 1 Tbsp Minced Garlic, 2 Tbsp Cooking Wine, 1 Tbsp Sugar, and 1 Tbsp Sesame Oil. Mix well until smooth. This perfect blend will add amazing flavor!
Step 4
Heat a pan over medium heat and add a generous amount of vegetable oil. Add the prepared potatoes and onions and stir-fry until the surfaces of the onions and potatoes become slightly translucent. This sautéing step adds a subtle sweetness to the potatoes and helps the seasoning absorb beautifully.
Step 5
Once the potatoes and onions are lightly stir-fried, pour in 1 cup (200ml) of water. The water should be enough to mostly cover the potatoes.
Step 6
Add all the prepared seasoning mixture to the pan. Stir well to ensure the seasoning is evenly distributed among the potatoes.
Step 7
Once the seasoning mixture begins to boil, add the sliced Korean chili pepper and reduce the heat to medium. Now, let it simmer gently until the seasoning coats the potatoes nicely. Stir the potatoes occasionally with a spoon to prevent them from sticking to the bottom of the pan and to ensure even seasoning. Simmer for about 10-15 minutes.
Step 8
When the potatoes are tender and the sauce has thickened to a glaze, add the chopped green onion and simmer for another moment to finish. The fragrant green onion will enhance the overall flavor.
Step 9
Your flavorful Spicy and Sweet Gochujang Braised Potatoes are ready! Served over warm rice, they are incredibly delicious. Enjoy your meal!
