Dried shredded squid, also known as ‘jinmi-chae’, is a processed food made from seasoned and dried squid, cut into thin strips. It’s easy to store, has a long shelf life, and a mild smell, making it a good option even for those who are not big fans of seafood. Stir-frying it with gochujang (Korean chili paste) and sweet seasonings makes for an excellent side dish that pairs perfectly with rice. Adding a touch of butter can enhance its flavor even further.

Cooking Instructions

Step 1

First, use scissors or a knife to cut the dried shredded squid into bite-sized pieces, about 3-5 cm long. If they are too long, it can be inconvenient to stir-fry or eat.

Step 2

Place the cut squid in a bowl and quickly rinse it 1-2 times under cold running water, gently rubbing it with your hands. This helps to soften the texture and allows the seasoning to adhere better. After rinsing, use paper towels to squeeze out as much water as possible. Leaving excess water can make the stir-fry soggy.

Step 3

Transfer the squeezed squid to a clean bowl. Add 2 tsp of sesame oil and gently toss to coat the shreds. This step helps to prevent the squid from sticking together or drying out during the stir-frying process and adds a nutty aroma.

Step 4

Now, add all the seasoning ingredients to the bowl: 2 Tbsp gochujang, 2 Tbsp mayonnaise, 1 Tbsp corn syrup (or oligosaccharide), 1 Tbsp sugar, 1 tsp minced garlic, and a pinch of black pepper. Mix well with your hands, ensuring the seasoning is evenly distributed throughout the squid. Mayonnaise helps to mellow the spiciness and adds a creamy texture.

Step 5

Heat a pan over medium-low heat and add a little cooking oil. Add the seasoned dried shredded squid to the pan. Stir continuously with a spatula as it cooks. Be careful not to let the seasonings burn, as the heat might be too high. Stir-fry for about 5-7 minutes, or until the moisture has evaporated and the squid is tender and slightly chewy. Constant stirring is key to prevent burning.

Step 6

Once perfectly stir-fried, spread the jinmi-chae onto a large plate or cutting board to cool slightly. This prevents it from clumping together.
