Basic Tteokbokki Ingredients

  • Tteokbokki rice cakes, 2-3 servings (adjust quantity to your preference)
  • Square fish cakes, 2 sheets
  • Green onion, 1/2 stalk

Cooking Instructions

Step 1

First, lightly rinse the tteokbokki rice cakes under running water to prepare them. If they are stuck together, gently separate them and place all of them into the pan.

Step 1

Step 2

Pour 2 cups of water into the pan, using a standard paper cup as measurement. Make sure to add enough water so the rice cakes can cook thoroughly.

Step 2

Step 3

Cut the square fish cakes into bite-sized pieces (e.g., triangles or strips) and add them to the pan along with the rice cakes.

Step 3

Step 4

Now it’s time to add the key seasonings for flavor. Add 1 tablespoon of gochujang. While 1 tablespoon is standard, you can add more if you like it spicier, or reduce the amount if you’re making it for children or prefer a milder taste. 🙂

Step 4

Step 5

Add 1 tablespoon of gochugaru (Korean chili powder) to give it a nice kick and vibrant color. You can use either fine or coarse gochugaru.

Step 5

Step 6

Add 1 tablespoon of soy sauce for an umami boost. Use regular soy sauce (jin-ganjang), not soup soy sauce (guk-ganjang).

Step 6

Step 7

Add 3 tablespoons of oligosaccharide for the sweetness of the tteokbokki. You can substitute with corn syrup or sugar, but oligosaccharide is recommended for its glossiness and smooth sweetness. Adjust the sweetness to your liking.

Step 7

Step 8

Finally, add a little minced garlic for an aromatic touch. Be careful not to add too much, as it can overpower the flavor.

Step 8

Step 9

Combine all ingredients and seasonings, and bring to a boil over high heat. Once the rice cakes become soft and the sauce starts to thicken, reduce the heat to medium-low and let it simmer until the sauce coats the rice cakes well. While the rice cakes are cooking, thinly slice the green onion on an angle. When the tteokbokki is almost done, add the sliced green onion and season with a pinch of salt to adjust the taste. Be careful not to make it too salty!
