  • 5 large white parts of green onions (choose ones of similar thickness)

Seasoning

  • 1 tsp minced garlic
  • 1 tsp ginger syrup or minced ginger (optional)
  • 1/2 Tbsp plum extract or syrup
  • 1/2 Tbsp soy sauce or fish sauce (e.g., anchovy sauce)
  • 1 tsp sesame oil (add at the end for fresh aroma)
  • 1/3 Tbsp whole or crushed sesame seeds (for nutty flavor)
  • 1/2 Tbsp gochugaru (Korean chili flakes, adjust to taste)
  • 1/2 Tbsp vinegar (key for that tangy taste)
  • 1/2 Tbsp lemon juice (or a little more vinegar if unavailable)

Cooking Instructions

First, prepare your fresh green onions. Wash them thoroughly and trim the white parts into about 5-6 cm lengths. Making a slit lengthwise down the middle of each piece of white onion can help you separate the layers for easier slicing.

Now, tightly roll each piece of green onion and thinly slice it into julienne strips by holding your knife horizontally. It’s easier than it looks! The thinner you slice them, the better they will absorb the seasoning.

Immediately place the julienned green onions into cold water or ice water. Gently massage them while rinsing to reduce their pungent spiciness and enhance their crispness. Drain them thoroughly in a colander. You can also gently squeeze out excess water with your hands.
