- 1 Tbsp cornstarch slurry (1 Tbsp water + 1 tsp cornstarch)
- 4 Tbsp soy sauce (2 Tbsp for marinade, 2 Tbsp for seasoning)
- 1 Tbsp oyster sauce
- 1/2 Tbsp granulated sugar
- Pinch of black pepper
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
- 1 Tbsp cornstarch slurry (1 Tbsp water + 1 tsp cornstarch)
Cooking Instructions
Step 1
First, let’s marinate the pork. In a bowl, combine 250g of pork for stir-fry with 2 Tbsp soy sauce, 1/2 Tbsp sugar, and a pinch of black pepper. Mix well and let it marinate for about 10 minutes. This will make the pork more tender and flavorful.
Step 2
Now, let’s prepare the fragrant green peppers. Wash 10 green peppers thoroughly, cut them in half lengthwise, and then cut each half into 8 pieces. You can adjust the size based on your preference, about 6-8 pieces per pepper is good.
Step 3
After cutting the green peppers, rinse them lightly under cold running water to remove any seeds. This helps to retain the mild spiciness of the green peppers while reducing any bitterness.
Step 4
Slice half an onion into pieces similar in size to the green peppers. The sweetness and texture of the onion will enrich the overall flavor of the green pepper stir-fry.
Step 5
Now, let’s start stir-frying. Heat a pan over medium heat with a little cooking oil. Add the marinated pork first and stir-fry until it’s mostly cooked through. Breaking up the meat with chopsticks or a spatula as it cooks will prevent clumping.
Step 6
Once the pork is about halfway cooked, add the prepared green peppers and onions to the pan. Increase the heat to high and stir-fry quickly. It’s important to keep the green peppers crisp, so don’t overcook them.
Step 7
When the pork and vegetables are almost cooked, add the remaining 2 Tbsp soy sauce and 1 Tbsp oyster sauce. Stir well to coat everything evenly and adjust the seasoning. Oyster sauce adds a wonderful umami depth.
Step 8
This is the final cooking step. Add 1 Tbsp of the prepared cornstarch slurry and stir quickly. The sauce will thicken and coat all the ingredients with a glossy sheen as it cooks.
Step 9
Turn off the heat. Stir in 1 Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds to finish. Your beautiful and glossy green pepper stir-fry is ready! Enjoy it with warm rice or steamed buns.
