To help my husband recover from continuous late nights at work, I made this delicious grilled eel with a spicy gochujang (Korean chili paste) glaze. It’s packed with nutrients and flavor to invigorate the senses and restore energy. You can easily make this gourmet dish at home!

Main Ingredients

  • 1 cleaned eel (approx. 300-400g)

Eel Seasoning

  • 1 Tbsp Mirin (or cooking sake)
  • Pinch of salt
  • Pinch of black pepper

Cooking Instructions

Step 1

First, let’s prepare the eel to remove any unpleasant odor. Sprinkle 1 tablespoon of mirin evenly over the cleaned eel and let it marinate for about 5 minutes. Then, lightly pat the eel dry with a paper towel and season it with a pinch of salt and pepper. While the eel is marinating, combine all the glaze ingredients (gochujang, soy sauce, corn syrup, mirin, sugar, sesame oil, ground sesame seeds, minced scallion, minced garlic, salt, and pepper) in a bowl. Mix well with a spoon until smooth and set aside. Mixing the sauce in advance allows the flavors to meld together beautifully.

Heat a pan or grill over medium heat. Place the marinated eel on the hot surface and grill until golden brown on both sides. Once the eel starts releasing its natural oils and is partially cooked, generously brush the prepared glaze all over the eel, front and back. Be mindful of the heat to prevent the glaze from burning. Continue to cook for about 3-5 minutes, ensuring the eel is fully cooked through and the glaze is caramelized and flavorful. You can brush on more glaze during this final stage for an extra glossy finish.
