  • 0.5 Tbsp Gochujang (Korean chili paste)

Prepare Baek Jong-won’s all-purpose jjajang paste, the key to delicious dishes. If you’re curious about how to make the paste, please refer to my other recipes! Today, I’ll be using jjajang paste that has been frozen and then thawed in the microwave. Having this paste on hand is incredibly convenient for various culinary creations.

Boil 300ml of water in a pot. Once boiling, add 1 pack of ramen noodles and cook them. Cook the noodles just like you normally would, but be careful not to overcook them until mushy.

Now, drain the water from the cooked ramen. Don’t drain it all; leave about 2-3 tablespoons of the cooking water. This reserved water will help the sauce and noodles mix together smoothly.

Next, prepare half a tablespoon of gochujang to add a touch of spiciness. Using a measuring spoon will ensure accuracy.

Add the prepared gochujang to the pot with the ramen. Stir it lightly, just enough to coat the noodles with a reddish hue. We’re only mixing in the gochujang at this stage, not the jjajang paste yet.

Now it’s time to add the all-purpose jjajang paste for that rich jjajang flavor. While the standard recipe calls for 1 tablespoon, I’m using 1.5 tablespoons today for a deeper and more robust taste. Feel free to adjust the amount according to your preference.
