Kimchi and fish cakes are a classic pairing, often enjoyed in soups. Today, I’m excited to share a recipe that transforms this delicious duo into a quick and savory side dish: a spicy and sweet stir-fry. It’s perfect for those times when you need a flavorful addition to your meal in a flash. ^^
Main Ingredients- 230g well-fermented kimchi, cut into bite-sized pieces
- 2 square fish cakes, cut into bite-sized pieces
- 90g green onion, chopped
Cooking Instructions
Step 1
First, prepare the kimchi and fish cakes by cutting them into bite-sized pieces. Chop the green onion. Heat a generous amount of cooking oil in a frying pan over medium-low heat. Add the chopped green onion and stir-fry for about 2 minutes until fragrant. This step of making ‘scallion oil’ significantly enhances the dish’s aroma. Once the scallion fragrance is released, add the cut kimchi and fish cakes and stir-fry them together.
Step 2
When the kimchi and fish cakes are slightly cooked, add 1 tablespoon of sugar to balance the spiciness and enhance the sweetness, stirring well. The sugar helps to mellow the heat of the kimchi while bringing out its savory notes. Next, add 1 tablespoon of Doubanjiang, 1 tablespoon of oyster sauce, and 1 tablespoon of paprika powder (or gochugaru) for color and flavor.
Step 3
Now, stir-fry everything evenly with chopsticks or a spatula to ensure the seasonings coat all the ingredients. Continue to stir-fry over medium heat for about 2-3 minutes.
