Main Ingredients
  • 600g Pork Shoulder (cut into bite-sized pieces)
  • 1/4 head of well-fermented Napa Cabbage Kimchi (cut into large pieces)
  • 1 stalk Green Onion (sliced diagonally)
  • 1/2 Onion (thickly sliced)
  • 1 Korean Chili Pepper (optional, for extra spiciness, sliced diagonally)
  • Pinch of Black Pepper

Seasoning Sauce
  • 5 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Minced Garlic
  • 4 Tbsp Soy Sauce
  • 1 Tbsp Sugar
  • 2 Tbsp Mirin (Rice Wine)
  • 2 Tbsp Oligodang (Corn Syrup)

Cooking Instructions

Step 1

First, prepare 600g of pork shoulder. Gently pat the surface of the pork with paper towels to absorb any excess blood. This step helps eliminate any gamey odor and ensures a clean flavor. Then, cut the pork into manageable, bite-sized pieces.

Step 2

Next, prepare the well-fermented Napa cabbage kimchi (1/4 head). Cut the kimchi into larger pieces rather than finely chopping it. This will help maintain a pleasant texture after stir-frying and allow the flavors to meld beautifully with the sauce.

Step 3

Let’s prepare the vegetables. Slice 1 green onion diagonally to add a fragrant aroma. Thickly slice 1/2 an onion; this will add sweetness as it cooks. If you enjoy a spicier kick, thinly slice 1 Korean chili pepper and add it to the mix.

Step 4

The key to a delicious Kimchi Pork Stir-fry lies in the seasoning sauce! In a bowl, combine 5 Tbsp Gochugaru, 1 Tbsp minced garlic, 4 Tbsp soy sauce, 1 Tbsp sugar, 2 Tbsp mirin (rice wine), and 2 Tbsp Oligodang (corn syrup). Mix thoroughly with a spoon until well combined. Using corn syrup adds a lovely sheen and enhances the savory notes.

Step 5

Now, let’s start stir-frying. Heat a pan over medium-high heat and add a drizzle of cooking oil. Add the prepared pork shoulder and sprinkle with a pinch of black pepper. Stir-fry the pork until it’s nicely browned and cooked through.

Step 6

Once the pork is partially cooked, add the chopped kimchi to the pan. Pour in the prepared seasoning sauce, and stir everything together to coat the kimchi and pork evenly.

Step 7

Continue to stir-fry, allowing the flavors of the pork, kimchi, and sauce to meld together. Once the sauce begins to thicken slightly, add the sliced green onions, onions, and Korean chili peppers. Toss everything to combine.

Step 8

Continue stir-frying until the vegetables are tender and slightly softened. The longer it cooks, the more the pork’s rich flavor will infuse into the kimchi, making it even more delicious! Taste and adjust seasoning if needed, adding a bit more soy sauce or sweetener if desired.

Step 9

Your delicious Kimchi Pork Stir-fry is ready to be enjoyed! It’s a guaranteed hit for the whole family, especially served over a bowl of hot steamed rice.
