Main Ingredients

  • 2/3 block of tofu (approx. 200g)
  • 1/2 medium onion

Seasoning & Others

  • 2 Tbsp Doubanjiang (Spicy Bean Paste – the key to flavor!)
  • 1 Tbsp Gochujang (Korean chili paste – adds a familiar spiciness)
  • 3 Tbsp Plum Extract (for sweetness and gloss)
  • 2 Tbsp Sesame Oil (for nutty aroma)
  • A little cooking oil (for stir-frying)
  • 1 tsp minced garlic (optional, for enhanced flavor!)
  • 1/2 Korean chili pepper, finely chopped (optional, for adjusting spice level)
  • A little green onion, chopped (for garnish, optional)

Cooking Instructions

First, dice the tofu into approximately 1.5cm cubes. Chop the onion into similar-sized pieces. If you have ground pork or beef at home, adding it with the onions will make your mapo tofu even richer and more delicious.

Heat about 1 tablespoon of cooking oil in a frying pan over medium heat. Add the cubed tofu and stir-fry lightly until the surface is golden brown. This helps prevent it from breaking apart later and adds a nutty flavor. Once the tofu is slightly cooked, add the chopped onion and stir-fry together.

When the onions start to turn translucent (after about 2-3 minutes), add 2 tablespoons of doubanjiang and stir-fry. The doubanjiang will meld with the oil, releasing a wonderful aroma. Don’t worry if the tofu breaks up at this stage; mapo tofu is meant to have a soft, slightly crumbled texture.

Now, add 3 tablespoons of plum extract, 1 tablespoon of gochujang, and 2 tablespoons of sesame oil. Stir-fry everything together until well combined. If you like, you can add minced garlic or finely chopped Korean chili peppers at this point for extra flavor and spice. Taste and adjust seasoning with soy sauce or salt if needed.
