Making bibimbap can sometimes feel like a lot of work, requiring the preparation of various ingredients. Today, I’m sharing a simple and delicious bibimbap recipe that’s perfect for when you want a flavorful meal without the fuss. Ingredients- 5 King Oyster Mushrooms
- 10 Lettuce leaves
- A handful of bean sprouts
- 1 Onion
- 2 Tbsp Cooking oil
- 2 Servings of cooked rice
Seasoning Sauce- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Gochujang (Korean chili paste)
- 4 Tbsp Soy sauce
- 3.5 Tbsp Corn syrup or Oligosaccharide
- 2 Tbsp Plums syrup or Fruit syrup
- 2 Tbsp Mirin or Rice wine
- 1 Tbsp Minced garlic
- 1 Tbsp Sesame seeds
- 2 Tbsp Sesame oil
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Gochujang (Korean chili paste)
- 4 Tbsp Soy sauce
- 3.5 Tbsp Corn syrup or Oligosaccharide
- 2 Tbsp Plums syrup or Fruit syrup
- 2 Tbsp Mirin or Rice wine
- 1 Tbsp Minced garlic
- 1 Tbsp Sesame seeds
- 2 Tbsp Sesame oil
Cooking Instructions
Step 1
First, prepare the king oyster mushrooms. Cut off the tough stem ends. Slice the mushroom caps and stems into thin matchsticks, about 0.5 cm thick. You can slice them thinly with a knife, or use a fork to shred them along the grain for a different texture.

Thinly slice one onion into strips, about 0.5 cm thick.
Step 3
Now, let’s make the special seasoning sauce that will bring this bibimbap to life! In a bowl, combine 2 Tbsp gochugaru, 2 Tbsp gochujang, 4 Tbsp soy sauce, 3.5 Tbsp corn syrup, 2 Tbsp plum syrup, 2 Tbsp mirin, 1 Tbsp minced garlic, 2 Tbsp sesame oil, and 1 Tbsp sesame seeds. Mix everything thoroughly with a spoon until well combined. Ensure the garlic is evenly distributed.
Step 4
Wash the lettuce leaves thoroughly under running water and gently pat them dry. Rinse the bean sprouts lightly and drain them. Keeping the vegetables fresh is key!
Step 5
Heat 2 Tbsp of cooking oil in a round pan over medium heat. Make sure the pan is preheated, but not so hot that the ingredients will burn.
Step 6
Add the sliced king oyster mushrooms to the preheated pan and begin to stir-fry. Cook until the mushrooms start to soften and release some moisture.
Step 7
Once the mushrooms are slightly tender, add the sliced onions to the pan and continue to stir-fry. Cook until the onions become translucent. This will bring out their natural sweetness.
Step 8
When the onions are translucent, add all the prepared seasoning sauce to the pan. Stir well with a spatula or spoon to ensure the sauce coats the mushrooms and onions evenly.
Step 9
Continue to stir and cook over medium-low heat for about 1-2 minutes, making sure the sauce doesn’t burn. The sauce should thicken slightly and have a moist consistency, which is ideal for mixing into rice. If it seems too dry, you can add a little water.
Step 10
Place a generous serving of warm rice into a bowl. Drizzle about 2 rounds of sesame oil over the rice and sprinkle with a pinch of sesame seeds to enhance the aroma.
Step 11
Now, pile the fresh lettuce leaves on top of the rice, followed by a generous spoonful of the delicious stir-fried mushroom sauce. Finish with a small nest of fresh bean sprouts.
