Ingredients

  • 120 Perilla leaves
  • 3 Tbsp chopped Green onion
  • A little Carrot, julienned

Seasoning Sauce

  • 8 Tbsp Soy sauce
  • 8 Tbsp Gochugaru (Korean chili flakes)
  • 4 Tbsp Minced garlic
  • 8 Tbsp Water
  • 4 Tbsp Fish sauce
  • 4 Tbsp Oligosaccharide (or corn syrup)
  • 2 Tbsp Sugar
  • 4 Tbsp Plum extract (or plum syrup)
  • 4 Tbsp Sesame oil
  • 4 Tbsp Toasted sesame seeds

Cooking Instructions

First, prepare the perilla leaves. Gently wash each leaf under running water to remove any dirt or debris. Lightly shake off excess water and set aside.

To refresh the perilla leaves and remove any potential bitterness, fill a large bowl with 2-3 cups of cold water and dissolve 1-2 tablespoons of vinegar. Submerge the perilla leaves in this mixture for about 5 minutes. This step helps to keep the leaves fresh and crisp.

Now, let’s make the delicious seasoning sauce. In a mixing bowl, combine the soy sauce, gochugaru, minced garlic, water, fish sauce, oligosaccharide, sugar, plum extract, sesame oil, and sesame seeds. Whisk everything together until the sugar is fully dissolved. Finally, add the chopped green onion and julienned carrot to the sauce and mix well to ensure all ingredients are evenly distributed. Letting the sauce sit for a few minutes will allow the flavors to meld beautifully.
