Main Ingredients

  • 3 medium onions
  • 9 Korean green chili peppers (adjust to your spice preference)

Golden Ratio Marinade

  • 300ml water
  • 200ml soy sauce (jin ganjang)
  • 100ml rice vinegar or apple cider vinegar
  • About 1 cup sugar (approx. 150-200g, adjust to taste)

Cooking Instructions

Step 1

First, peel the onions and wash them thoroughly under running water. Then, cut them into bite-sized pieces that are easy to eat. Aim for about 2-3 cm pieces; if they are too small, they might become mushy easily.

Step 1

Step 2

Sterilize a glass jar by boiling it in hot water and ensure it is completely dry. Pack the sliced onions neatly into the prepared jar. In between the onion layers, thinly slice the Korean green chilies and add them in. This will add a spicy kick and enhance the overall flavor.

Step 2

Step 3

Measure out the soy sauce, water, vinegar, and sugar and combine them in a saucepan or bowl. Stir the marinade ingredients well until the sugar is completely dissolved. Since this recipe doesn’t involve cooking, ensuring the sugar is dissolved is crucial.

Step 3

Step 4

Carefully pour the prepared marinade over the sliced onions and chilies in the jar. Make sure the marinade fully covers the onions to ensure they absorb the flavors evenly.

Step 4

Step 5

Close the lid of the jar tightly and refrigerate for at least one day to let it mature. After about a day, the onions will have a crisp texture and a delightful sweet and sour flavor that comes together perfectly. They will taste even better after 2-3 days of pickling!
