Main Ingredients- 100g ground pork
- 300g well-fermented kimchi
- 2 eggs
- 4 servings of rice (preferably day-old)
- Pinch of black pepper
Seasoning- 1 Tbsp gochujang (Korean chili paste)
- 1/2 Tbsp sugar
- 1 Tbsp gochujang (Korean chili paste)
- 1/2 Tbsp sugar
Cooking Instructions
Step 1
Finely chop the kimchi. If your kimchi is very sour, adding a little sugar later will help balance the flavor.
Step 2
Heat about 1-2 tablespoons of cooking oil in a frying pan over medium-high heat. Add the ground pork and stir-fry until it’s no longer pink. Then, add the chopped kimchi and cook together. Stir in 1/2 tablespoon of sugar to enhance the kimchi’s flavor.
Step 3
Once the pork and kimchi are somewhat cooked, add 1 tablespoon of gochujang. Stir well to combine and continue to stir-fry until everything is evenly coated. Be careful not to burn the gochujang; cooking over medium-low heat is recommended.
Step 4
Add the cooked rice to the pan. Use a spatula to break up any clumps and stir-fry until the rice is well mixed with the kimchi seasoning. The key is to stir-fry until each grain of rice is coated and the texture becomes slightly chewy and separated.
Step 5
As the fried rice nears completion, prepare two fried eggs in a separate pan. You can cook them to your preference (sunny-side up or over-easy). Once done, place the fried eggs on top of the fried rice. Finish with a sprinkle of black pepper, if desired, for a perfectly delicious pork and kimchi fried rice!
