We made this Pork Back Rib Kimchi Stew for a family gathering, and it was a huge hit! While it might be a bit messy to eat, it’s perfect for family meals where you can happily get your hands and faces a little dirty while laughing and enjoying your food. It’s a fantastic way to use up aged kimchi, pack in amazing flavor, and enjoy tender pork back ribs. It was an excellent dish for entertaining guests!
Ingredients for Ribs and Pre-cooking
- 1kg Pork back ribs
- 5 Bay leaves
- 10 Peppercorns
- 2 Tbsp Soju (Korean rice wine)
Kimchi Stew Ingredients

Cooking Instructions
Step 1
First, prepare 1kg of pork back ribs. It’s crucial to soak the ribs in cold water for at least 3 hours to remove any blood. Change the water 2-3 times during this process. This step is key to ensuring a clean and non-gamey flavor in your stew.
Step 2
For the second step in removing any gamey odor, place the drained ribs in a pot. Add 5 bay leaves, 10 peppercorns, and 2 tablespoons of soju. Boil for about 20 minutes. This will further tenderize the ribs and remove any lingering smells, resulting in a more pleasant taste.
Step 3
While the ribs are boiling, let’s make the delicious sauce! In a bowl, combine 3 Tbsp gochugaru, 1 Tbsp gochujang, 1 Tbsp doenjang, 2 Tbsp soy sauce, 2 Tbsp minced garlic, 2 Tbsp mirin, 1 Tbsp sugar, and 2 Tbsp oligodang. Mix well. Slice 2 onions thickly, chop 1 leek diagonally, and finely chop 2 Cheongyang peppers.
Step 4
If you prefer a clean and sharp spicy kick, using Cheongyang peppers is recommended. Feel free to adjust the spiciness to your liking! Using green chilies will give you a milder level of spice.
Step 5
After the initial boil, rinse the pork back ribs under cold running water. This helps remove any impurities from the surface and allows the marinade to penetrate better in the next step. Gently pat them dry to remove excess water.
Step 6
Pour all the prepared spicy sauce over the drained ribs. Gently massage the sauce into the ribs with your hands, ensuring every piece is well-coated. This step is important for the sauce to adhere well to the ribs.

Now, it’s time to layer everything in the pot and cook. Start by placing half a head of aged kimchi at the bottom of the pot. Then, arrange the marinated ribs, sliced onions, leeks, and peppers on top. Add 200-300ml of water and cover the pot. Bring to a boil over medium heat, then reduce to low heat and simmer for about 40 minutes. Be careful not to add too much water, as it can turn into a kimchi soup. You can adjust the water based on the saltiness of your kimchi and its liquid content.
