Spicy and Sweet Pork Belly Duruchigi
Easy Main Dish Recipe: Soft Tofu, Kimchi, and Pork Belly Duruchigi
This is a fantastic main dish that’s perfect as a drinking snack or a hearty side for rice! Enjoy the rich flavors of kimchi and soft tofu in this stir-fry.
Main Ingredients- 300g Frozen Pork Belly (thawed)
- 1 bowl Ripe Kimchi (approx. 300g)
- 1/2 block Soft Tofu (approx. 150g)
- 1/4 Onion (thinly sliced)
- A little Green Onion (thinly sliced, mostly white parts)
Seasoning Sauce- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Fine Gochugaru (Korean chili powder)
- 2 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Sugar
- 1 Tbsp Oligodang (corn syrup)
- 1 Tbsp Maesilcheong (plum extract)
- 1 Tbsp Sesame Oil
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Fine Gochugaru (Korean chili powder)
- 2 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Sugar
- 1 Tbsp Oligodang (corn syrup)
- 1 Tbsp Maesilcheong (plum extract)
- 1 Tbsp Sesame Oil
Cooking Instructions
Step 1
First, prepare the main ingredient: pork belly. Using frozen pork belly is convenient, but any kind works! Make sure to thaw it completely before use. (Optional: Slice the half block of tofu into 1.5cm thick pieces.)
Step 2
Chop the kimchi into bite-sized pieces. It’s important to adjust the seasoning based on the amount of kimchi you use. Using slightly sour kimchi will add a deeper flavor.
Step 3
Let’s make the key to delicious Duruchigi: the sauce! In a bowl, combine 1 Tbsp Gochujang, 1 Tbsp fine Gochugaru, 2 Tbsp Soy Sauce, 1 Tbsp minced garlic, 1 Tbsp sugar, 1 Tbsp Oligodang, and 1 Tbsp Maesilcheong. Mix well until thoroughly combined.
Step 4
Pour all the prepared sauce over the pork belly. Gently mix with your hands to ensure the sauce coats the pork belly evenly. Marinating it beforehand makes it much more flavorful.
Step 5
Now, prepare your pan. Lightly grease a pan heated over medium-low heat, then add the marinated pork belly. Even if using frozen pork belly, thawing it first is recommended.

Once the pork belly starts to cook, add the chopped kimchi. Stir-frying kimchi and pork together creates a fantastic flavor combination.

Finally, drizzle in 1 Tbsp of sesame oil for added aroma. The nutty fragrance will whet your appetite.

Maintain medium-low heat and stir frequently to prevent burning, cooking until the pork belly and kimchi are fully cooked through. The key is to simmer and stir-fry until done.

When the pork and kimchi are cooked to some extent and the sauce has thickened, add the thinly sliced onion and green onion. Stir-fry just until the vegetables soften slightly to maintain their crispness.

It’s important to cook over medium-low heat from start to finish until the vegetables are tender. This allows the flavors to meld beautifully without burning, resulting in a delicious Duruchigi.
Step 11
