This recipe is perfect for when you have a lot of aged kimchi (mukimchi) on hand. It transforms your kimchi into a delicious, savory, and slightly sweet dish.
Main Ingredients- Pork Belly 2 strips (approx. 400g)
- Aged Kimchi 1/4 head (approx. 300g)
- Onion 1/2 medium
- Green Onion 1 stalk

Step 1
Let’s start by preparing the seasoning sauce for a delicious stir-fry. In a bowl, combine Gochujang (2 Tbsp), Gochugaru (1.5 Tbsp), Sugar (1 Tbsp), Cheongju or Mirin (3 Tbsp), Minced Garlic (1 Tbsp), and Sesame Oil (1 Tbsp). Mix them thoroughly until well combined, ensuring there are no clumps of gochujang. You can adjust the amount of sugar or gochujang depending on the saltiness and sourness of your aged kimchi.
Step 2
Peel and wash the onion, then slice it into strips about 0.5cm thick. Slicing them a bit thicker will prevent them from breaking apart too much while cooking, which is ideal.

Cut the aged kimchi into bite-sized pieces, approximately 3-4cm in length. If the kimchi is excessively sour, you can add a little extra sugar to balance the acidity. Ensure the pieces are manageable for stir-frying.

Cut the pork belly into bite-sized pieces, similar to the kimchi (about 3-4cm). Heat a frying pan or wok over medium heat. Add the sliced pork belly and cook until it’s golden brown and slightly crispy. You don’t need to add extra oil, as the pork belly will render its own fat.

Once the pork belly is nicely browned, add the sliced onions to the pan. Stir-fry them together with the pork belly until the onions become translucent and start to release their sweetness, absorbing the rendered pork fat.

Now, add the prepared seasoning sauce and the cut aged kimchi to the pan. Stir vigorously to ensure all ingredients are evenly coated with the sauce. Continue to stir-fry until the kimchi softens and the flavors meld together.
