Cooking Instructions
Step 1
First, let’s make the delicious broth that forms the base of our Rabokki. In a pot, add 1300ml of water, dried anchovies, kelp, and half a green onion. While the broth is simmering, you can prepare the other ingredients, which saves time.
Step 2
Now, let’s prepare the vegetables. Cut the cabbage into 3 large pieces. Since the leaves are layered, make sure to separate them and wash thoroughly under running water. This step ensures any dirt or impurities are removed, leading to a cleaner taste.
Step 3
Cut the square fish cakes into bite-sized triangles. Of course, you can cut them into squares or strips if you prefer. Cutting them into your favorite shape makes the cooking process more enjoyable.
Step 4
Peel the onion and slice it into medium-thick strips.
Step 5
Slice the remaining green onion diagonally. This cut helps the onion absorb the sauce well and looks visually appealing.
Step 6
Mince the garlic cloves. Minced garlic is crucial for adding depth and aroma to the sauce.
Step 7
Slice the sausages diagonally. This shape helps them maintain their form while cooking and looks nice. Feel free to cut them into other shapes based on your preference.
Step 8
Once the broth begins to boil, remove the kelp immediately. Boiling kelp for too long can release a slimy substance that can make the broth cloudy and affect the taste. After removing the kelp, let the broth simmer for about 10 more minutes, then remove the anchovies and green onion to complete the clear broth.
Step 9
Now, let’s make the delicious Rabokki sauce! To the clear broth, add gochujang, soy sauce, gochugaru, minced garlic, sugar, and mirin. Stir well until everything is smoothly combined without lumps.
Step 10
Add the rice cake soup rice cakes and the noodle-type tteokbokki rice cakes to the pot with the broth and sauce mixture. Stir gently to prevent them from sticking together as they cook.
Step 11
Once the rice cakes are slightly cooked, add the prepared fish cakes, sliced onion, chopped cabbage, and sausages. These ingredients will create a wonderfully rich and varied flavor.
Step 12
Taste the Rabokki and if you’d like it sweeter, add corn syrup (or oligodang). If you don’t have it, you can substitute with more sugar. Adjust the sweetness to your liking!
Step 13
If you want to make it Rabokki, now is the time to add the ramen noodles! They will cook along with the other ingredients. If you prefer plain tteokbokki, simply skip this step.
Step 14
When all the ingredients are nicely cooked, give it a final touch by sprinkling a pinch of black pepper. The subtle peppery heat complements the spicy and sweet flavors beautifully.
Step 15
Finally, add the diagonally sliced green onions and let it simmer for another moment. Your delicious spicy and sweet Rabokki is complete! Serve hot and enjoy. Happy cooking!
