  • 4 Tbsp Minced Garlic
  • 8 Tbsp Sweet Rice Porridge (prepared warm)
  • 180g Corn Syrup (or Rice Syrup)
  • 90g Soy Sauce
  • 260g Vegetable Broth (or Anchovy Broth)

Soak the dried radish greens and red pepper leaves in lukewarm water for about 30 minutes until fully rehydrated. After soaking, rinse them thoroughly under running water to clean them. Squeeze out as much water as possible with your hands – this is the key to ensuring the seasoning penetrates well.

Prepare a delicious broth. In a pot, combine kelp, dried shiitake mushrooms, and dried pollack heads. Add cold water and simmer to create a flavorful broth. You’ll need 260g of broth, so it’s a good idea to make a little extra.

Once the broth begins to boil, remove the kelp immediately. Continue to simmer the shiitake mushrooms and pollack heads over medium heat for about 10 minutes to extract their deep flavors. Strain the broth to get a clear liquid.

In a bowl, combine the gochugaru, minced garlic, sweet rice porridge, corn syrup, soy sauce, and the prepared broth. Mix thoroughly until there are no lumps, creating a flavorful seasoning paste. Adjust the soy sauce amount to your preference.
