Perfect for when you have a low appetite! This dish is a true rice thief. We’re revealing the secrets to making delicious spicy and sweet red seasoned bean sprouts that everyone loves, and that also makes a fantastic side dish for meat. Even beginners can easily follow along!
Essential Ingredients- 300g fresh bean sprouts
- 0.5 Tbsp coarse salt (for blanching bean sprouts)
- 2 Tbsp fine chili powder
- 2 Tbsp soup soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp minced garlic
- 0.5 Tbsp sugar
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, carefully check and prepare all the ingredients needed for the recipe. Fresh bean sprouts are key to the taste of this dish, so make sure to use ones that are crisp and vibrant.
Step 2
Gently rinse the prepared 300g of bean sprouts 1-2 times under running water. Be careful not to wash them for too long, as this can reduce their crispiness.
Step 3
Fill a pot with plenty of water and bring it to a rolling boil over high heat. Once the water is boiling vigorously, add all the rinsed bean sprouts. Also, add 0.5 Tbsp of coarse salt to eliminate any unpleasant smell from the bean sprouts.
Step 4
After adding the bean sprouts, blanch them for approximately 2 minutes and 30 seconds. If you blanch them for too long, they will become mushy and lose their crisp texture, so be sure to time it precisely. Personally, I find this duration to be the perfect balance of crispiness and flavor.
Step 5
Once blanched, immediately drain the bean sprouts into a wide colander. Then, rinse them quickly under cold running water to cool them down; this will make the bean sprouts even crispier.
Step 6
The key to making the seasoning adhere well is to remove as much water as possible from the bean sprouts. You can do this by shaking them gently in the colander or lightly pressing them with your hands to squeeze out the water. Avoid squeezing them too forcefully, as this can cause them to become mushy or develop an unpleasant ‘green’ taste.
Step 7
Transfer the drained bean sprouts to a large mixing bowl. Now it’s time to add the seasonings.
Step 8
First, add 2 Tbsp of fine chili powder to give it a spicy kick.
Step 9
Add 1 Tbsp of minced garlic for a clean, aromatic flavor. If you enjoy a stronger garlic taste, you can add a little more.
Step 10
Add 2 Tbsp of soup soy sauce to provide a savory depth of flavor. Using soup soy sauce adds a richer taste.
Step 11
Finally, add 1 Tbsp of sesame oil for a nutty aroma. Using high-quality sesame oil will significantly enhance the flavor.
Step 12
Lastly, add 0.5 Tbsp of sugar to slightly sweeten the dish, balancing all the flavors.
Step 13
Once all the seasoning ingredients are added, gently toss the bean sprouts to coat them evenly without crushing them. It’s important to mix everything thoroughly so that the seasoning is distributed well. Finally, sprinkle 1 Tbsp of toasted sesame seeds on top for added fragrance.
Step 14
Transfer the delicious, freshly seasoned red bean sprouts to a serving container. It’s a simple yet incredibly tasty dish! Enjoy your homemade bean sprouts!
