Spicy and Sweet Sausage and Vegetable Stir-fry
Make a Super Simple Spicy and Sweet Sausage and Vegetable Stir-fry
Wondering what to cook today? I decided to make a simple sausage and vegetable stir-fry. It’s a side dish my youngest absolutely loves! I personally prefer my soy sauce stir-fries a bit spicy, so I always add chili powder. I’ll be enjoying this with the clear bean sprout soup I made this morning.
Main Ingredients- 4 sausages
- 1/2 onion
- 1 bell pepper
Seasoning- 3 Tbsp ketchup
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp corn syrup
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 1 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp ketchup
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp corn syrup
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 1 Tbsp gochugaru (Korean chili flakes)
Cooking Instructions
Step 1
First, thinly slice the 4 sausages diagonally. Slicing them not too thin will give them a better texture when stir-fried. Diagonal cuts make them look more appealing.
Step 2
Chop half an onion into bite-sized pieces. Try to cut them into somewhat large pieces rather than finely mincing, as they can become mushy when stir-fried.
Step 3
Remove the seeds from 1 bell pepper and chop it into similar sized pieces. Using half of a red bell pepper and half of a yellow one will make the dish visually appealing and enhance its presentation.
Step 4
In a small bowl, combine 3 Tbsp ketchup, 1 Tbsp gochujang, 1 Tbsp corn syrup, and 1 Tbsp sugar. Mix them well to create the sauce. The balance between sweetness and spiciness is key.
Step 5
Heat about 1-2 Tbsp of oil in a pan over medium-low heat. Add 1 Tbsp of minced garlic and stir-fry until fragrant, being careful not to burn it. The garlic is ready when it turns golden brown.
Step 6
Once the garlic is fragrant, add the sliced sausages and stir-fry over medium heat until they are nicely browned. Stir-frying the sausages first allows some of their fat to render, resulting in a less greasy and more flavorful dish.
Step 7
When the sausages are golden brown, add the chopped onion and bell peppers to the pan. Stir-fry them together with the sausages. Cooking over medium heat rather than high heat will help the vegetables soften while maintaining a pleasant crispness.
Step 8
Once the onions start to turn translucent, add all of the prepared sauce to the pan. Stir-fry everything together for about 1-2 minutes until the sauce coats the ingredients evenly and the flavors meld.
Step 9
Finally, add 1 Tbsp of gochugaru (Korean chili flakes) and stir quickly to combine. Gochugaru can burn easily, so add it just before turning off the heat and stir for a short while. Your delicious spicy and sweet sausage and vegetable stir-fry is ready!
