- 1 pouch Grape juice (approx. 100ml)
- 1 Ripe tomato (medium size, mashed)
- 3 Tbsp Ketchup
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Oyster sauce
- 1 Tbsp Oligodang (corn syrup or similar sweetener)
- 1 Tbsp Minced garlic
- 1 Tbsp Sesame oil
- Sesame seeds, to garnish
Cooking Instructions
Step 1
Make several decorative cuts on the Vienna sausages. Blanch them in boiling water for about 1-2 minutes to remove impurities and achieve a prettier shape. After blanching, rinse with cold water and drain.
Step 2
Chop the onion into thick slices. Seed the bell pepper and cut it into bite-sized pieces, along with the carrot. Cutting vegetables into similar sizes ensures they cook evenly and taste better.
Step 3
Now, let’s make the special sauce that will define the flavor of your soya stir-fry! In a mixing bowl, combine ketchup, gochujang, oyster sauce, oligodang, and minced garlic. Mix well. Peel, finely chop, or mash the tomato and add it to the sauce for a richer flavor.
Step 4
In a wide frying pan, pour in the grape juice pouch and add the mashed tomato. Bring to a simmer over medium-low heat. The grape juice and tomato will gently blend to form the sauce base.
Step 5
Once the grape juice and tomato mixture begins to boil, add all of the prepared special sauce. Stir well and let it simmer. Be careful with the heat to prevent the sauce from burning.
Step 6
As the sauce starts to bubble, add dried chili peppers or deseeded bird’s eye chilies (if using) to add a spicy kick, according to your preference. (You can omit this if you don’t like spicy food.)
Step 7
Once you can smell the spicy aroma, add the sliced onions, bell peppers, and carrots. Stir-fry them, mixing well with the sauce, until the vegetables are slightly softened. Don’t overcook them.
Step 8
When the vegetables are partially cooked, add the blanched sausages last. Gently toss them to coat with the sauce and cook briefly. Be careful not to overcook the sausages, as they can become mushy.
Step 9
It’s important to stir continuously over medium heat to prevent the sauce from burning. High heat can cause the sauce to scorch quickly. Once all ingredients are well combined and the sauce has thickened slightly, turn off the heat. Drizzle with 1 tablespoon of sesame oil and sprinkle with sesame seeds to finish. Your delicious soya stir-fry is ready!
