  • 2 bundles of Gim (seaweed laver), cleaned
  • 1 handful of Korean radish (about 1/4 medium radish), thinly julienned
  • 1 handful of pear, thinly julienned

Radish Marinating

  • 1 Tbsp vinegar
  • 1/2 Tbsp sugar
  • 1 tsp salt

Dressing

  • 3 Tbsp vinegar
  • 1.5 Tbsp sugar
  • 1 Tbsp fish sauce (such as Kkanari)
  • 1 Tbsp minced garlic
  • 1 Tbsp chopped green onion
  • A pinch of sesame seeds

Cooking Instructions

Rinse the seaweed thoroughly under cold running water several times. You can gently agitate it with your hands or swish it around in a bowl to remove any sand or debris. Once clean, drain it well in a colander and set aside.

Julienne the Korean radish and pear as thinly as possible. Thin strips will absorb the dressing better and provide a pleasant texture. Place the julienned radish and pear in a mixing bowl.

To the julienned radish, add the marinating ingredients: 1 Tbsp vinegar, 1/2 Tbsp sugar, and 1 tsp salt. Gently mix and massage the radish. Marinating the radish beforehand helps it release some water and become crispier, ensuring it doesn’t become mushy when mixed with the seaweed.

In a separate bowl, combine all the dressing ingredients: 3 Tbsp vinegar, 1.5 Tbsp sugar, 1 Tbsp fish sauce, 1 Tbsp minced garlic, and 1 Tbsp chopped green onion. Stir well until the sugar is dissolved. You can adjust the amount of vinegar and sugar to your preference – add more sugar for sweetness or more vinegar for tanginess.

Place the well-drained seaweed into a large mixing bowl. Add the marinated radish and the julienned pear. Pour the prepared dressing over the ingredients. Sprinkle with sesame seeds. Gently toss everything together, as if you are fluffing up hair, to coat the seaweed and vegetables evenly with the dressing. Make sure to include any liquid released from the marinated radish, as this adds flavor and moisture to the salad.
