Vegetables

  • 1 sheet Cabbage (approx. 50g)
  • 1/4 Onion (approx. 50g)
  • 1/2 Green Onion (approx. 30g)
  • 5 cloves Garlic
  • 1 Korean Red Pepper (Cheongyang Pepper)
  • 1/2 Red Bell Pepper
  • 1 can Spam (approx. 200g)
  • 2 bowls Cooked Rice

Seasoning Mix

  • 1 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Maesilcheong (Plum Extract)
  • 1 Tbsp Soy Sauce
  • 2/3 Tbsp White Sugar (or granulated sugar)
  • 1 Tbsp Rice Syrup (or corn syrup)
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

Begin by preparing the vegetables and Spam. Thinly slice the onion into strips. Cut the cabbage into bite-sized square pieces. Finely mince the Cheongyang pepper as it can be quite spicy. Slice the red bell pepper into desired shapes. Thinly slice the garlic cloves for maximum flavor release.

Heat a pan over medium heat and add a generous amount of cooking oil. Add the sliced onion, cabbage, green onion, minced garlic, and peppers. Sauté until the vegetables are slightly softened and fragrant. Turn off the heat temporarily.

Dice the Spam into small cubes, similar in size to the vegetables, and add it to the pan. Now, add the seasoning ingredients: 1 Tbsp Gochujang, 2 Tbsp Gochugaru, 1 Tbsp Maesilcheong, 1 Tbsp Soy Sauce, and 2/3 Tbsp white sugar. Use a spatula or a cooking paddle to thoroughly mix all the ingredients with the Spam and vegetables.

Drizzle in 1 Tbsp of rice syrup (or corn syrup) for a glossy finish and a touch of sweetness, followed by 1 Tbsp of sesame oil for its nutty aroma. Sprinkle the toasted sesame seeds over the top to finish.

Add the 2 bowls of warm cooked rice to the pan. Break up any clumps of rice with your spatula and stir-fry the rice with the seasoned ingredients over medium heat until everything is well combined and the rice grains are separated and lightly toasted. Continue stirring until the flavors meld together beautifully, completing your delicious spicy and sweet Spam fried rice!

The balance of sweet and savory can be adjusted by modifying the amount of sugar and soy sauce. For a sweeter taste, add more sugar, and for a saltier flavor, add more soy sauce to suit your preference. Feel free to enhance the dish further by adding shredded seaweed (gim) or a fried egg on top.
