Quick and Delicious Squid Rice Bowl Using Frozen Squid Tentacles
Here’s a recipe for a fantastic meal using leftover squid tentacles from holiday preparations or ancestral rites. Even if fresh squid is expensive, you can make a wonderfully flavorful stir-fried squid dish with just frozen tentacles. Stir-fried in a savory and sweet sauce, the squid tentacles are delicious served over warm rice for a satisfying meal that will reignite your appetite!
Main Ingredients- 500g Frozen Squid Tentacles
- 1/2 Onion
- 1 Green Onion
- 2 Chilies (e.g., Cheongyang or Red)
- 1/8 Carrot
Cooking Instructions
Step 1
Rinse the squid tentacles thoroughly under running water. Gently rub with your fingertips to remove any suckers for a cleaner preparation. Slice them into bite-sized pieces, starting from where they connect to the body. Ensure the tentacles are separated so they don’t clump together when cooking and absorb the sauce evenly. If any tentacles are too long, trim them to match the length of the others for easier eating.
Step 2
Heat a pan over medium-low heat. Add 3 tablespoons of mayonnaise and 1 tablespoon of minced garlic. Sauté until fragrant, being careful not to burn the mayonnaise. Add the thinly sliced 1/2 onion and the white parts of the green onion, cut diagonally, and stir-fry until the onions become translucent. This step helps to remove any fishy odor from the squid and enhances its flavor.
Step 3
Add the prepared squid tentacles to the pan and increase the heat to high. Stir-fry quickly to prevent the squid from releasing too much moisture. Immediately add 1 tablespoon of soy sauce, 1 tablespoon of gochujang, 2 tablespoons of cheongju, 3 tablespoons of gochugaru, 1 tablespoon of maesil cheong, 1 tablespoon of oligodang, and 1/2 teaspoon of black pepper. Stir-fry rapidly to ensure the spicy and sweet sauce coats the squid evenly. Cook until the sauce is well combined with the squid.
Step 4
Once the squid tentacles are almost cooked and look plump, add the 2 roughly chopped chilies and the green parts of the green onion, sliced diagonally. Add the 1/8 carrot, julienned, for a fresh crunch. Stir-fry briefly after adding the vegetables, just until they are slightly softened but still retain their crispness. Avoid overcooking to preserve the vegetables’ texture.
Step 5
Just before turning off the heat, drizzle in 1 tablespoon of sesame oil for added shine and a nutty aroma. Adding sesame oil at the end preserves its fragrance. Serve the finished spicy and sweet squid stir-fry generously over warm rice and enjoy mixing it all together!
