Main Ingredients- 400g chicken feet (boneless)
- 200ml milk
- 4 bay leaves
- 1 Tbsp whole peppercorns
Seasoning- 3 Tbsp gochujang (Korean chili paste)
- 3 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp soy sauce
- 1.5 Tbsp oligodang (corn syrup)
- 2 Tbsp maesilcheong (plum extract)
- 2 Tbsp minced garlic
- Pinch of black pepper
- 1 Tbsp sesame oil
- 4 cheongyang peppers (finely chopped)
- 3 Tbsp gochujang (Korean chili paste)
- 3 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp soy sauce
- 1.5 Tbsp oligodang (corn syrup)
- 2 Tbsp maesilcheong (plum extract)
- 2 Tbsp minced garlic
- Pinch of black pepper
- 1 Tbsp sesame oil
- 4 cheongyang peppers (finely chopped)
Cooking Instructions
Step 1
First, to remove any gamey odor from the chicken feet, soak 400g of chicken feet in 200ml of milk for about 10 minutes. This step effectively neutralizes the characteristic smell, resulting in a cleaner taste.
Step 2
Wash the 4 cheongyang peppers, remove the seeds, and finely chop them. Adjust the amount of chili peppers if you prefer it spicier.
Step 3
In a large bowl, combine all the seasoning ingredients: 3 Tbsp gochujang, 3 Tbsp gochugaru, 3 Tbsp soy sauce, 1.5 Tbsp oligodang, 2 Tbsp maesilcheong, 2 Tbsp minced garlic, a pinch of black pepper, and 1 Tbsp sesame oil. Mix well until smooth to create a delicious seasoning paste.
Step 4
Rinse the chicken feet, which have been soaking in milk, thoroughly under running water. In a pot, add the chicken feet, 4 bay leaves, 1 Tbsp whole peppercorns, and enough water to cover the chicken feet. Prepare to boil them.

Once the water begins to boil, reduce the heat to medium and add the chicken feet. Boil for approximately 5 minutes. Be careful not to overcook, as this can make the chicken feet mushy. This step helps achieve a pleasant chewy texture.
Step 6
Immediately after boiling, rinse the chicken feet under cold water to cool them down. Drain them well in a colander. Ensuring the chicken feet are well-drained is crucial for them to absorb the sauce properly when stir-frying and taste even better.
Step 7
Add the prepared seasoning mixture to the drained chicken feet. Gently massage the seasoning into the chicken feet with your hands, ensuring an even coating. Letting it marinate for about 5 minutes will allow the flavors to penetrate more deeply.

Prepare a wide and deep pan by adding a moderate amount of cooking oil and heating it over medium heat. A sufficiently heated pan is important for stir-frying the chicken feet deliciously.

Once the pan is hot, add all the seasoned chicken feet. Stir constantly with a spatula to prevent the seasoning from burning. Stir-fry until the chicken feet are lightly browned and the sauce has thickened.

After stir-frying the chicken feet for a while, turn off the heat briefly and use a kitchen torch to lightly sear the surface of the chicken feet. This adds a smoky flavor. (Using a torch is optional and the dish is still delicious without it.)
