I discovered this amazing side dish in my friend’s refrigerator – it was stir-fried dried filefish! I usually only grill dried filefish to enjoy as a snack with drinks. But making it as a side dish for meals makes it a real rice thief! I immediately took out the dried filefish that was sitting in my fridge to make some side dishes. This recipe is perfect for using up leftover dried filefish and creating a dish that everyone, young and old, will love.

First, cut the dried filefish into bite-sized pieces using scissors. This makes it easier to handle and eat. Cutting them into manageable lengths is ideal, especially for children or elders.

In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp gochugaru, 1 Tbsp minced garlic, 2 Tbsp mirin, 2 Tbsp water, and a pinch of sesame seeds. Mix well until the sauce is evenly combined. Preparing the sauce in advance allows the flavors to meld beautifully.

Next, place the cut dried filefish into a dry pan over low heat (do not preheat the pan). Stir and toast the filefish gently until it becomes slightly puffed up and golden brown. This step is crucial for achieving a pleasant chewy texture. Be careful not to burn it.
