Delicious Stir-fried Dried Filefish Strips
My son started his new job and moved into a dormitory. To welcome my brother who came home for the weekend, my elder sister bought large dried filefish (Gwi-po) and I made this delicious dish for my son. This recipe turns simple dried fish into a savory and slightly sweet side dish that’s perfect with rice.
Main Ingredients- 4 sheets of large dried filefish (Wang Gwipoche)
Seasoning- 2 Tbsp cooking oil
- 2 Tbsp soy sauce
- 2 Tbsp gochujang (Korean chili paste)
- 5 cloves garlic, minced (about 1/2 Tbsp)
- 1 Tbsp corn syrup or oligosaccharide
- 1 Tbsp sugar
- 2 Tbsp plum extract (maesilcheong)
- A drizzle of sesame oil (for finishing)
- A sprinkle of toasted sesame seeds (for finishing)
- 2 Tbsp cooking oil
- 2 Tbsp soy sauce
- 2 Tbsp gochujang (Korean chili paste)
- 5 cloves garlic, minced (about 1/2 Tbsp)
- 1 Tbsp corn syrup or oligosaccharide
- 1 Tbsp sugar
- 2 Tbsp plum extract (maesilcheong)
- A drizzle of sesame oil (for finishing)
- A sprinkle of toasted sesame seeds (for finishing)
Cooking Instructions
Step 1
First, prepare the 4 sheets of large dried filefish (Wang Gwipoche). Cut the dried filefish into bite-sized pieces. If you cut them too thinly, they might break apart while stir-frying, so cutting them about 1-1.5 cm wide will give a nice texture.
Step 2
Heat a pan over medium-low heat and add 2 Tbsp of cooking oil. Add the 5 minced garlic cloves (or about 1/2 Tbsp minced garlic) and slowly stir-fry to release the garlic aroma. Be careful not to burn the garlic; slow and steady is key.
Step 3
Once the garlic is fragrant, add the prepared dried filefish strips to the pan and stir-fry them with the garlic. Continue stir-frying until the filefish strips are lightly golden. This will enhance their nutty flavor. Cook over medium-low heat to prevent burning.
Step 4
In a separate small pan, combine all the seasoning ingredients: 2 Tbsp soy sauce, 2 Tbsp gochujang, 1 Tbsp corn syrup, 1 Tbsp sugar, and 2 Tbsp plum extract. Stir well. Gently heat the mixture over low heat until it just begins to bubble. (Stir continuously to prevent the sauce from burning.)
Step 5
Now, add the stir-fried filefish strips to the simmering sauce. Toss and mix everything together for about 1-2 minutes until the filefish strips are well coated with the sauce. Finally, drizzle with a little sesame oil and sprinkle with toasted sesame seeds. Your delicious, chewy, savory, and sweet stir-fried dried filefish strips are ready! They are so tasty, you’ll find it hard to stop eating them.
