The taste of dried shredded squid brings back childhood memories! Even as an adult, it’s a side dish I often crave. Back in the day, Korean dried shredded squid was affordably priced, making it an easy side dish to whip up frequently. However, nowadays, the price has become quite steep, making me hesitate before purchasing. I’m also a little unhappy that much of it is imported. But since my kids love it so much, I can’t help but make it! ^^ This time, I tried stir-frying it with a different kind of oil. While the difference wasn’t drastic, I noticed a subtle yet pleasant flavor variation. The gentle spiciness makes it a flavor that I don’t get tired of. Main Ingredients- Dried shredded squid 300g
Seasoning Ingredients- Scallion-infused oil 5 Tbsp
- Gochugaru oil (chili oil) 2 Tbsp
- Honey 2 Tbsp
- Sugar 4 Tbsp
- Mirin (or cooking wine) 3 Tbsp
- Toasted sesame seeds (for garnish)

Cooking Instructions
Step 1
First, prepare the dried shredded squid. Use scissors to cut it into bite-sized pieces, about 5-7 cm long. If they are too long, they can be inconvenient to stir-fry.
Step 2
Prepare a wide pan or wok. Add 5 tablespoons of scallion-infused oil and heat it gently over medium-low heat. If you have pre-made scallion-infused oil, it will add a deeper flavor. (Alternatively, you can use store-bought scallion oil.)
Step 3
Once the pan is heated, add the cut dried shredded squid. Make sure to keep the heat on low. Stir-frying over high heat can make the squid tough or burn it. Stir-fry over low heat for about 2-3 minutes, allowing the moisture from the squid to evaporate.
Step 4
As the squid begins to soften slightly, add the prepared seasoning ingredients in order. Add 2 tablespoons of gochugaru oil, 2 tablespoons of honey, 4 tablespoons of sugar, and 3 tablespoons of mirin. Mix well. Stir constantly over low heat to ensure the seasonings coat the squid evenly and quickly. It’s crucial to keep stirring to prevent the sauce from sticking or burning, especially as the sugar melts and can easily scorch!
Step 5
Finally, sprinkle with toasted sesame seeds for a nutty aroma. Once all the seasonings are well absorbed and the squid has a glossy sheen, turn off the heat and transfer the dish to a serving plate. It tastes even better once it has cooled slightly.
