First, let’s prepare the jinmi-chae. For this recipe, we’ll use it directly without rinsing in water to maintain a tender texture. Cut the jinmi-chae into bite-sized pieces (about 5-7cm long). Place the cut jinmi-chae in a bowl and mix with 3 tablespoons of mayonnaise. Coating the jinmi-chae with mayonnaise is the secret to it absorbing the sauce well and becoming tender.
